軟雪糕深受男女老幼歡迎，那柔滑細軟，甜美清香的味覺歡愉，是生活裏面的犒賞。有人說是美國雪糕店老闆Tom Carcel 發明軟雪糕，但美國及英國等食品公司亦自稱是發明者。五十年代香港已有軟雪糕售賣，其中一間是著名的皇上皇雪糕。好吃的軟雪糕是奶味香濃突出，甜度適中，質感黏滑，太軟太硬都不成，更不可咬到細碎冰粒。
坊間軟雪糕質素不一，關鍵是用料品質和雪糕機的性能，不過使用名牌雪糕機，員工也要懂得因應季節轉變調校溫度。現在不時發生軟雪糕含菌量超標事件，由於牛奶是主要材料，容易滋生細菌，所以有生產軟雪糕的公司，每日都會清洗軟雪糕機，避免發生事故。
