    Sofia:「最近移居到陽光普照的洛杉磯,炎熱得來帶點乾燥,有何湯水推介?」

    CheckCheckCin:陽光普照被視為好天氣,但熱邪過盛也會消耗氣和陰液,所以炎熱天氣下我們特別容易出暗瘡、頭瘡、喉嚨痛、發燒等上火症狀。如果所住地區溫暖又乾燥,身體需要一點點偏涼的湯水,宜選擇屬性偏涼的蔬菜入饌,例如番茄、西芹、青/白蘿蔔、白菜等,配搭具清熱解毒、消暑祛濕功效的綠豆,有助清熱解毒。

    番茄 — 性涼,有生津止渴、健胃消食、涼血平肝功效,適合發熱口乾、食慾不振者食用,它亦有護膚美白的功效。惟注意番茄性涼,胃寒人士不宜食用,寒性痛經女士在月經期間勿吃,胃酸過多者不宜空腹食用。

    番茄薯仔綠豆湯
    功效:清熱健脾,紓緩炎熱天氣帶來的口乾、喉嚨痛、悶熱等症狀。
    材料:番茄3個、薯仔2個、椰菜半個、西芹2細條、綠豆20克
    做法:
    1. 所有材料洗淨,番茄切件;薯仔去皮切塊;椰菜及西芹切塊備用。
    2. 鍋中加入2000毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

According to Chinese Medicine theories, the pathogenic factor can invade the body and exhaust the yin, and this is why we experience dry mouth and sore throat easily.

    When the body cannot dissipate heat on time, yin-yang balance is disrupted, causing us to develop a heatstroke. Therefore, individuals who live in dry and warm areas should consume soups and vegetables that are cool in nature such as tomato, celery, green/white radish, Chinese cabbage, not forgetting mung beans, which can relieve the summer-heat and clear toxins from the body.

    Tomato - cool in nature, has the effects of promoting fluid promotion, quenching thirst, strengthening the stomach, aiding digestion, cooling blood and calming the liver. Suitable for fever, dry mouth, those with poor appetite. It can nourish and whiten skin. But it is cool in nature making it not suitable for those with cold stomachs. Women with cold type menstrual pain should not eat tomatoes during menstruation. Those with gastric hyperacidity should not consume it with an empty stomach.

    Tomato and potato soup with mung bean
    Effects: Clears heat and strengthens the spleen, relieves dry mouth, sore throat, stuffiness and other symptoms caused by hot weather.
    Ingredients: 3 tomatoes, 2 potatoes, 1/2 cabbage, 2 stalks of celery, 20g mung bean
    Preparation:
    1. Rinse all ingredients thoroughly. Cut the tomato into pieces. Peel the potato and cut into pieces. Cut the cabbage and celery into pieces.
    2. Combine all ingredients with 2000ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add salt to taste.

    【家常湯水】豆奶是大家最熟悉的植物奶

    自製火鍋豆奶湯
    日式火鍋常見有豆乳湯底供應,日文豆乳即豆漿,又稱豆奶,豆乳湯底味道相對清淡,感覺比較健康,一向受追求健美的人士歡迎。從中醫角度來看,黃豆性平,有健脾養胃、利濕及補益的功效,有助紓緩脾虛水腫、無胃口等症狀,而黃豆含有植物性雌激素大豆異黃酮,對皮膚有抗氧化作用。豆奶功效多多,但並非人人適合飲用,因為豆類容易令人脹氣,脾胃虛寒,即平素容易胃脹、泄瀉者,則不宜飲用豆漿。豆奶湯製作簡單,注意要買無糖豆奶,加入喜歡的蔬菜或肉類就可煮成湯,用作打邊爐湯底亦可,記得份量要適可宜止。

    食材小貼士:
    姬松茸性平,有健腦益腎、扶正補虛的功效。

    姬松茸蔬菜豆奶湯
    功效:健脾養胃,滑腸通便,有助改善改善消化不良等症狀。
    材料:姬松茸30克、洋蔥半個、紅蘿蔔半條、椰菜1/4個、無糖豆奶600毫升、水400毫升
    做法:
    1. 所有材料洗淨,姬松茸用清水浸15分鐘,浸姬松茸水可以直接加入湯中一起煮;洋蔥切粒;紅蘿蔔去皮切片;椰菜切塊備用。
    2. 在深鍋裡加油燒熱,加入洋蔥炒香,加入椰菜及紅蘿蔔,加入姬松茸拌炒一會。
    3. 加入水及豆奶,武火煮至水滾,調文火煮約10分鐘至食材軟腍,最後下鹽調味即可。
    注意:脾胃虛寒者不宜飲用。

    Homemade soymilk hotpot
    Soymilk is a common soup used in nabe, or Japanese hotpot. Since it has a mild taste, health conscious people enjoy drinking it. From the perspective of Chinese Medicine, soybean is mild in nature. It can strengthen the spleen and stomach, dispel dampness from the body, and has nourishing properties. Hence, it is suitable to strengthen a person’s weak spleen, relieve edema, and improve one’s appetite.

    Soybean contains isoflavones, which is a type of phytoestrogen that has anti-oxidant properties. Soymilk is good for the body, but it is not suitable for everyone. Beans can cause bloating, hence individuals with a weak and cold spleen and stomach, and those who experience bloating and diarrhea regularly should avoid drinking it.

    It is not difficult to make soymilk soup at home. Buy unsweetened soymilk from the store, add in vegetables or meats, and cook them into a pot of soup. You can use the soup for hotpot, and consume it in an appropriate amount.

    Tips on ingredient:
    Almond mushroom is mild in nature. Helps to strengthen the brain and kidney, strengthen the body and replenish weakness.

    Almond mushroom and vegetable soup with soymilk
    Effects: Strengthens the spleen and stomach, moisten the intestines and relieve constipation. Helps improve symptoms such as indigestion.
    Ingredients: 30g almond mushroom, 1/2 onion, 1/2 carrot, 1/4 cabbage, 600ml unsweetened soymilk, 400ml water
    Preparation:
    1. Rinse all ingredients thoroughly. Soak almond mushrooms in water for 15 minutes. Soaking water can be directly added to the soup and boiled together. Dice the onion. Slice the peeled carrot. Slice the cabbage into pieces.

    3. Add water and soymilk and cook on high heat until boiling. Simmer for 10 minutes until ingredients are softened. Add salt to taste.
    Note: Those with weak and cold spleen and stomach should not have this soup.

    6 oz(170g)
    Pork shreds
    1 Tbsp soy sauce
    Some white pepper
    1 Tbsp cornstarch
    1/2 Tbsp water

    Sauce mix:
    1/3 cup to 1/2 cup
    mushroom water
    1 Tbsp
    sweet bean sauce
    1/2 Tbsp soy sauce
    1 tsp sugar
    Some white pepper

    花椰菜里肌捲
    材料
    花椰菜 適量 broccoli q.s.
    里肌肉片 適量 pork loin q.s.
    起司片 適量 cheese slices q.s.
    鹽 適量 salt q.s.
    黑胡椒粉 適量 black pepper powder q.s.
    作法
    1. 取兩片里肌肉片攤開,放上切小朵的花椰菜,再將肉片捲起。
    2. 將花椰菜里肌捲放在煎鍋中,撒上鹽、黑胡椒粉與起司片。
    3. 再放入烤箱中,以180℃烤約12分鐘即可。

    培根蘆筍捲
    材料
    蘆筍 適量 asparagus q.s.
    培根 適量 bacon q.s.
    起司絲 適量 shredded cheese q.s.
    作法
    1. 取一片培根攤開,放上一把蘆筍,再將培根捲起。
    2. 將培根蘆筍捲放在煎鍋中,撒上起司絲。
    3. 再放入烤箱中,以180℃烤約12分鐘即可。

    高麗菜五花捲
    材料
    高麗菜絲 適量 cabbage q.s.
    五花肉片 適量 pork belly q.s.
    鹽 適量 salt q.s.
    黑胡椒粉 適量 black pepper powder q.s.
    米酒 1大匙 cooking rice wine 1tbsp.
    七味粉 適量 schichimi togarashi q.s.
    作法
    1. 取五花肉片攤開,放上高麗菜絲,再將五花肉片捲起。
    2. 將高麗菜五花肉放在煎鍋中,以中火煎至兩面變色。
    3. 加入鹽、黑胡椒粉與米酒調味。
    4. 再煎至且肉片熟透且上色,再撒上七味粉提味即可。

    洋蔥牛肉捲
    材料
    洋蔥絲 適量 onion q.s.
    牛肉片 適量 beef slices q.s.
    味醂 2茶匙 mirin 2tsp.
    醬油 1大匙 soy sauce 1tbsp.
    米酒 2大匙 cooking rice wine 2tbsp.
    熟白芝麻 適量 white sesame q.s.
    作法
    1. 取牛肉片攤開,放上洋蔥絲,再將牛肉片捲起。
    2. 將洋蔥牛肉捲放在煎鍋中,以中火煎至兩面變色。
    3. 加入味醂、醬油與米酒燒至收汁。
    4. 再加入熟白芝麻即可。

    1) 高麗菜

    材料:
    高麗菜 500公克/cabbage 500g
    蒜末 25公克/garlic 25g
    辣椒片 10公克/chili pepper 10g
    水 50公克/water 50g
    調味料:
    鹽 適量/salt q.s.

    作法:
    1. 高麗菜切成適口的大小片。
    2. 鍋子調整火力至【強】,放入辣椒片和蒜片爆香,放入高麗菜,稍微拌一下後淋上水。
    3. 蓋上鍋蓋,燜約1分鐘至高麗菜軟。(用水燜,高麗菜更清甜!)
    4. 開蓋將高麗菜翻炒均勻即可。(保留營養和鮮甜!)


    2) 豆芽菜

    材料:
    豆芽菜 450公克/bean sprout 450g
    洋蔥絲 50公克/onion 50g
    蒜末 30公克/garlic 30g
    水 50公克/water 50g
    奶油 20公克/ butter 20g

    調味料:
    黑胡椒粒 1茶匙/black pepper powder 1tsp.
    鹽 少許/salt q.s.

    作法:
    1. 豆芽菜去除尾端,口感更好。
    2. 鍋子調整火力至【強】,放入洋蔥絲和蒜末爆香,放入豆芽菜,淋上水。
    3. 蓋上鍋蓋,燜約1分鐘至豆芽菜變軟。(先燜再炒,去除豆腥味!)
    4. 開蓋,撒上調味料,放上奶油,豆芽菜翻炒均勻即可。(就像鐵板燒店現炒!)


    3) 奶油菠菜
    材料:
    菠菜 500公克/spinach 500g
    洋蔥末 20公克/onion 20g
    蒜末 20公克/garlic 20g

    調味料:
    鹽 1/4茶匙/salt 1/4tsp.
    鮮奶油 60公克/whipping cream 60g

    作法:
    1. 菠菜切成適當小段。
    2. 鍋子調整火力至【強】,放入洋蔥末和蒜末爆香,放入菠菜,稍微拌一下後淋上水。
    3. 蓋上鍋蓋,燜約2分鐘至菠菜軟。(重點:菠菜燜軟才不會有澀味!)
    4. 開蓋將菠菜翻炒均勻,再淋上鮮奶油即可。(加點鮮奶油,口感更滑嫩)


    4) 雙色花椰菜
    材料:
    綠花椰菜 250公克/broccoli 250g
    白花椰菜 250公克/cauliflower 250g
    蒜末 30公克/garlic 30g
    水 200公克/water 200g
    調味料:
    鹽 1/4茶匙/salt 1/4tsp.
    奶油 20公克/butter 20g

    作法:
    1. 白花椰菜、綠花椰菜切成小朵,去除粗絲後洗淨。
    2. 鍋子調整火力至【強】,放入花椰菜,淋上水。
    3. 蓋上鍋蓋,燜約2分鐘至花椰菜軟。(不用另外燙,保留更多營養!)
    4. 開蓋,放入奶油和蒜末、鹽,翻炒均勻即可。(爽脆又清甜!)
