    黃耳湯潤肺抗秋燥
    踏入初秋,開始感受到秋燥的威力,皮膚開始變得繃緊乾燥,除了多塗抹潤膚乳,還要記得內在調理,多飲用有滋陰潤肺功效的湯水,增加身體津液。滋潤湯水常用到雪耳,而肉質較厚的黃耳,其滋潤效果一樣高,而且補脾胃效能更勝雪耳,特別適合陰虛、血虛、氣虛、陽虛體質人士食用。乾身的黃耳皺褶很多像個小腦袋,煲煮前要先清洗,並且浸泡數小時至軟身才使用,小小的黃耳浸泡後可發大數倍,除了煲湯,黃耳本身帶有淡淡桂花香味,煮糖水同樣美味。

    滋陰潤燥湯水小貼士:
    適當地添加滋陰潤燥的食材如沙參、玉竹、麥冬、枸杞子等。

    黃耳百合螺頭烏雞湯
    功效:健脾潤肺,有助舒緩因為乾燥而出現的不適症狀。
    材料:黃耳2塊、新鮮百合1個、蓮子40克、乾淮山20克、乾螺頭5塊、烏雞1隻、蜜棗2枚

    做法:
    1. 所有材料洗淨,烏雞氽水備用;百合剝開一片片,黃耳及乾螺頭浸泡至軟身備用。
    2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮2小時,最後下鹽調味即可。

    Yellow fungus soup with lily bulb and black chicken

    Ingredients: 2 yellow fungus, 1 fresh lily bulb, 40g lotus seed, 20g dried Chinese yam, 5 dried couches, 1 black chicken, 2 candied dates
    Preparation:
    1. Rinse all ingredients thoroughly. Blanche black chicken and set aside. Peel lily bulb. Soak yellow fungus and dried couches until soft.
    2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 2 hour. Add salt to taste.

    霸王花湯清熱潤燥
    秋天是燥邪旺盛的季節,其對應五臟為肺經,所以這個季節特別容易出現呼吸系統問題,例如咳嗽、咽喉痛等症狀,所以養生重點在於潤肺,肺臟「喜潤而惡燥」,適當滋潤肺臟就可減低秋燥對身體的影響。霸王花性寒,具有清心潤肺、清暑解熱、除痰止咳的功效,用來煲湯最適合秋天飲用。

    潤肺湯水小貼士:
    1/適當地添加潤肺食材如雪耳、石斛、杏仁、海底椰等。
    2/新鮮霸王花及乾品功效及使用分量也相約,但新鮮相對水分較多,而且帶黏液,煲出的湯水會較濃稠,味道也較清甜,下次在街市看到有新鮮霸王花不妨試試。

    霸王花沙參玉竹湯
    功效:清熱潤燥,紓緩嘴唇乾、口渴、咽喉不適及便秘症狀。
    材料:乾霸王花2朵 (或鮮霸王花1-2朵)、粟米2根、沙參20克、玉竹20克、百合15克、蜜棗2枚
    做法:
    1. 所有材料洗淨,粟米去衣切塊備用。
    2. 鍋內加入約2500毫升水,放入全部材料,以武火煮至水滾,調文火煮約1.5小時,最後下鹽調味即可。
    注意:寒咳、脾胃虛寒、容易腹瀉者不宜飲用。

    1. Rinse all ingredients. Peel corn, keep silk and cut into pieces. 
    2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hour. Add salt to taste.
    Note: Those with cold cough, weak and cold spleen and stomach, prone to diarrhea should not have this soup.
