Braised beef brisket with tomatoes and carrot with high speed cooker

Ingredients:
Frozened beef brisket 3 lbs
Tomatoes 5 Nos.
Shallots a bunch
Carrots (small) 8 logs

Preparation/Steps:
1. Beef brisket, remove plastics. Put in high speed cooker. Add in cooking salt 1 tbsp and boiled up water 1L. Cover up the wok. Heat up for 15 minutes.
2. Tomatoes, rinse with tap water. Divide each one into 4 shares.
Shallots, get them peeled. Rinse with tap water.
Carrots, rinse its skin with tap water.
3. Beef briskets have been blanched, pour away water. Rinse with tap water. Drain.
4. Rinse the cooker with detergent properly.
5. Beef brisket, put into pot. Add seasoning:
a. Pepper 1 tbsp
b. Tomato ketchup half bottle
c. Chicken sauce 1 tbsp
d. Rock sugar 2 big cubes
Mix well. Cover up the pot. Use tendons function, braise for 40 minutes.
6. In the last 6 minutes, add in:
a. Carrot
b. Tomatoes
c. Shallots
Mix well.
7. Restart the high speed cooker, use "tendons" function, braise for 40 minutes again.
8. Complete. Put on plate. Serve.

【關於這首歌 About the song】

我去年無意中在Spotify上面發現了一首來自巴西團 Tribalistas（部落人）的一首歌。當時覺得：「天阿，這個曲名怎麼那麼長？到底是什麼意思？」，所以去查了歌詞來了解意境。

I came across this song by the Brazilian group Tribalistas last year, and when faced with such a song title, I asked: "WHY so many words and what do they all mean?" So I promptly looked it up.

查的時候才發現：天阿，這些情境跟情感實在是太優美，而且翻譯成中文的話竟然還會有押韻？！所以我很快的寫了中文的歌詞，然後這首歌就默默的成為我非常心愛的一個東西。

Upon research, my thoughts were: "Okay this song is gorgeous and - huh, these things rhyme if I translate the lyrics into Mandarin." So I wrote Mandarin lyrics to it, and it has since become one of my most cherished songs.

【關於這支影片 About this video】

繼上次的創做跟編曲之後，我好像稍微摸索出了自己喜歡（跟不喜歡）還有擅長（與不擅長）哪些東西，所以這次又更挑戰了自己做出更複雜的編曲還有更不同的製片。

After my last endeavor, I've started to sort of figure out what works and doesn't work for me, so I pushed myself on this one to work with more complicated stuff, both in music and video production.

這次在音樂上不但多加了很多不同的「樂器」（慢的鼓刷其實是窗簾，然後牛鈴是我的水瓶）也嘗試了不通的後製。影片上除了將影像調整成統一的風格，也將歌詞非常認真的細寫然後自己挑戰從零開始的抽象動畫。

Musically, I added more "instruments" (The slow brushes were my curtains and the cowbell was my water bottle) as well as effects. Visually, I tied the videos together more stylistically and put more effort into neater handwritten lyrics as well as animating more ethereal things from scratch.

什麼是Vegan？從純素飲食到純素保養，你一定要知道的6大重點

Vegan翻譯為純素，也就是杜絕動物性成分，不只落實在飲食，還包含Vegan保養等生活各層面，究竟Vegan從何而來？6個重點一次掌握。

Vegetarian是英文初級單字，但近幾年你更常看到的可能是Vegan──純素。Vegan保養、飲食崛起，根據Google數據，2012年起，Vegan的搜尋量首次超越vegetarian，之後連年再創新高，但你真的懂這個爆紅關鍵字嗎？

1. Vegan一字從何而來？
Vegan最早出現在1944年，由英國人華森（Donald Watson）提出，他將vegetarian的頭三個和最後兩個字母組合成新字Vegan，代表「vegetarian的開始與結束」。

華森曾目睹一頭豬在家族農場遭宰殺而感到恐懼，14歲起就成為素食者。後來他認為乳品的產製過程同樣剝削動物，於是在1944年出版一份名為「Vegan News（純素新聞）」的刊物，提倡排除所有動物性成分，Vegan一詞於是誕生。

華森同時創立「英國純素協會（The Vegan Society）」，並界定Vegan不只著重飲食，而是擴及生活各層面。

Vegan是一種態度和主張，Vegan和vegetarian的差異詳列如下：

2. Vegan飲食有哪些好處？
友善環境：
全球四分之一溫室氣體排放來自食物，而其中逾一半來自動物性食品。飼養牛對環境的衝擊最大，到2050年，養牛所消耗的飼料和水就足以供養20多億人口。牛消化過程中還會產生大量甲烷，是比二氧化碳更具破壞性的溫室氣體。
假使每週吃1～2次牛肉，一人一年下來產生604公斤溫室氣體，相當於開著汽油車行駛2,500公里。牛津大學馬丁學院（Oxford Martin School）研究指出，如果全球將飲食轉為Vegan，到2050年可減少70%的溫室氣體排放。
維護健康：
蔬果富含纖維、維生素、礦物質，且飽和脂肪與膽固醇較低，被認為可能降低糖尿病與心血管疾病風險。上述同份研究表示，假使全球採用Vegan飲食，到2050年，每年可避免810萬人死亡。
但長期Vegan飲食也可能導致omega-3脂肪酸、維生素D與B12攝取不足，採用Vegan飲食前請諮詢專業醫生建議。
保育動物：
每人一生當中平均吃下7,000隻動物，其中數量最多的是魚，共4,500尾，雞則是第二高，共 2,400隻。
即使不食肉，一杯蜂蜜檸檬也有意想不到的衝擊，蜜蜂儲存花粉和蜂蜜是為了生存過冬，而非供給人類。商業養蜂可能危害蜜蜂生命，一個遭受破壞的蜂巢中就有2 ～8萬隻蜜蜂，而蜜蜂是授粉昆蟲，蜜蜂減少代表植物也將受波及。
3. 除了飲食，生活中還能怎麼實踐Vegan？
Vegan一字誕生時，就是以保護動物、尊重生命的信念出發，因此在生活各層面都希望杜絕對動物的剝削與迫害。

「Vegan Calculator」計算，光是維持一個月的Vegan生活，每人平均可拯救30隻動物生命，你可以實踐的方式包括：

抵制動物實驗：
包括醫藥、清潔、美妝等各產業都可能涉及動物實驗，但目前已有人體實驗或細胞培育、電腦模擬等技術可取代，請認明Leaping Bunny、PETA，以及CCF標章等無動物實驗標章，慎選產品。
拒用動物性成分：
蜂蠟、皮革、蠶絲、羊毛、膠原、胭脂蟲等成分都來自動物，存在於保養、彩妝、成衣、配件等各類產品中，但多數都有替代性成分可取代。
拒絕剝削動物的娛樂：
賽狗、賽馬、牛仔競技、馬戲團等可能以不當方式對待動物，或剝奪其自由。可改為參觀流浪動物之家或捐款給保育單位，換另一種形式給予關注。
購買需要的而不是想要的：
人與動物共享地球資源，人類的過度消耗同樣是對動物的剝削。選用永續、低碳的商品並理性購物，讓更多資源回歸大地。
4. Vegan的限制似乎很多，如何才能無壓力地實踐？
任何習慣如果太令人痛苦，就不容易養成。與其全面性地快速改變，「自然而然」、「循序漸進」地嘗試，是較可行的方案。

例如可從「7日蔬食」起步，以少肉→無肉→無任何動物性成分的方向逐步前進，或從減塑開始，漸漸達成零塑的終極目標。一步步建立與環境、動物共好的知識脈絡，自然能有意識地做出每次的消費選擇。

更重要的是尋找「替代品」，
例如以豆製品取代肉的口感並補充蛋白質、以植物纖維取代蠶絲衣料，或以植物萃取、植物油取代蜂蠟、甘油、角鯊烯等動物性成分，達到對皮膚一樣好的保養效果。

5. 動物性成分真的能被取代嗎？
動物性成分並不是非用不可，以保養為例，歐洲的芳療、亞洲的草藥都有長期使用植物的紀錄，包括蘆薈、金盞花、薄荷、薰衣草等功效都已被認可。例如金盞花含有類胡蘿蔔素及生物類異黃酮，能減少發炎並加速傷口癒合，能很好地修護皮膚。

植物油的潤澤效果也極佳，更可能含有對肌膚更加分的物質，例如玫瑰果油含天然鞣花酸，能促進膠原蛋白形成；葵花籽油則帶有相當SPF 28的天然防曬系數。

要注意的是，不含動物成分的Vegan保養品不代表100%純植物萃取，例如許多醫師推薦的鎖水成分凡士林，就可以使用於Vegan保養品中。

6. 如何挑選優秀的Vegan產品？
Vegan產品除了不做動物實驗，也不能使用動物性成分，在美妝保養領域中，就必須排除蜂蜜、蜂蠟、蠶絲、角蛋白、甘油、角鯊烯、羊毛脂、膠原、胭脂蟲等。

其中蜂蠟常用來表現唇膏的質地、顯色度及滑順度，在調香領域也有定香功能。要捨棄蜂蠟，必須投入大量人力時間反覆試驗，目前市面上能做到的品牌並不多，AVEDA是其中之一。

AVEDA自2021年1月起正式成為使用100% Vegan 成分的美妝保養品牌，正因為Vegan的核心是與動物、環境共好，因此從原料到包裝都全力符合永續精神：

AVEDA全面使用Vegan原料，所有商品、調香、染膏及沙龍專業用品項，皆不含動物性成份，也不進行動物實驗。
AVEDA採取Soil to Bottle從土壤到瓶身的生產標準，與產源明確且符合永續標準的原料供應商、契作農場合作，確保每個環節都能友善環境和當地人民。
例如與印度農場契作，輔導成為有機耕作農地，並提供合理收購價格，讓婦女孩童不用遠赴都市工作，也保障了教育機會。
全產品來自100%風力發電生產。
2020年，AVEDA新增3.6英畝的太陽能發電機，電力可供給50%產品製造所需，一年為地球減少1100公噸碳排放量。

「回收材質最大化、包裝體積最小化」是AVEDA致力的產品包裝標準，並透過加工賦予回收材質第二生命。目前除了紙盒及玻璃製品，其餘包裝瓶身皆使用八成以上的回收塑料，一年可省下逾600噸全新塑料。
