    Vietnamese cold vermicelli with roasted pork knuckle

    Ingredients: (servings for 2)
    Vietnamese cold vermicelli 1 catty
    Carrot 1 No.
    Cucumber 1 log
    Cabbage 1 No.
    Chili 2 Nos.
    Garlic 4 Nos.
    Shallots 1 No.

    Seasoning:
    Fish sauce
    Rock sugar
    White vinegar

    Steps:
    1. Vietnamese cold vermicelli, put in a big bowl. Boil up a pot of water. Pour into the bowl. Stir the vermicelli with a pair of chopsticks. Rinse with tap water. Hang dry. Put it into the bowl again. Pour cold boiled~up water into the bowl. Hang dry.
    2. Prepare the sauce for vermicelli:
    a. Chili, get it diced.
    b. Garlics, squash and diced.
    c. Shallots, chop well.
    To be put in the same bowl.
    3. Add seasoning into the bowl:
    a. Fish sauce 1 tbsp
    b. White vinegar 2~3 tbsp
    c. Water 3 tbsp
    d. Rock sugar syrup 3~4 tbsp
    Mix well. Taste it. Put in refrigerator.
    4. The vermicelli, has been hung dry already. Put in the bowl.
    5. Carrot, get it peeled, then shred, put on top of vermicelli.
    6. Cucumber, get it peeled, then shred, put on top of vermicelli.
    7. Cabbage, get it shredded, put on top of vermicelli.

    Lemon lime is to be added into the sauce. If you have no lemon lime, just use lemon juice instead.

    Serve with roasted pork knuckle.

    第一步 起魚片,切鹹酸菜

    第三步 魚片加入醃料,攪拌,待完全吸收備用
    第四步 起鑊,開滾水,烚鹹酸菜約一分鐘,隔水備用
    第五步 落油,炒芽菜,備用
    第六步 落油、薑,把魚頭、魚骨煎至金黃色
    第七步 把酸菜落鑊炒香,直至開始乾身微焦,然後落油爆香其他菜料
    第八步 加熱水,大火滾起後,加入魚頭,然後調至中火煲3分鐘,芽菜放在碗底
    第九步 魚湯加入魚露、糖、胡椒粉、醋調味,煮好之後把所有材料撈起,放入鍋中
    第十步 將魚湯收細火,加入魚片滾15秒,撈出放入碗中,把魚片慢慢推散,使其平均受熱

    貼士:
    -魚骨煎至兩邊金黃 湯才會奶白入味
    -野山椒是酸菜魚辣味的靈魂
    -啤酒洗魚片有去潺和殺菌作用
    -「起雙飛」砌法有助令魚片更加吸收精華

    STEP 3 Add marinade to the fish fillets and mix well,Set aside
    STEP 4 Boil a pot of water,Cook pickled cabbage for one minute,Drain and set aside
    STEP 5 Add oil and stir-fry the bean sprouts
    STEP 6 Add oil and ginger,Cook fish head and fish bones until golden
    STEP 7 Stir-fry the pickled cabbage,Until dry and crisp,Add oil to cook the vegetables
    STEP 8 Pour in hot water and bring to a boil,Add the fish head,Simmer on medium heat for 3 minutes,Put bean sprouts at the bottom of the pot
    STEP 9 Add fish sauce, sugar, white pepper and black vinegar to the broth,Put all the ingredients into the pot
    STEP 10 Cook the fish fillets on low heat for 15 seconds,Disperse and cook evenly,Add to the pot

    TIPS:
    -Cook fish bones until golden for a milky white fish broth
    -Wild chili pepper is the essence of the dish's hotness

    青瓜 ... 半條
    蔥 ... 適量
    香葉 ... 兩片

    香醋 ... 3茶匙
    花雕酒 ... 1茶匙

    食譜:
    第一步 煮一鍋滾水,將豬肉汆水
    第二步 換一鍋水,加入鹽、蔥、香葉、豬肉,以中火加熱至水滾,水滾起計煮25分鐘
    第三步 將青瓜切絲,並置於冰水中備用
    第四步 將調味料以及蒜頭以攪拌機攪勻,製成醬汁
    第五步 將煮好的豬肉置於冰水中約5-10分鐘,並將青瓜絲從冰水取出,取一碟,將青瓜絲置於碟上
    第六步 將豬肉切片擺盤,淋上醬汁並加上蔥花即成

    STEP 3 Shred the cucumber,Put in ice water and set aside
    STEP 4 Grind the seasonings and garlic with a food processor to form the sauce
    STEP 5 Put the cooked meat in ice water for 5-10 minutes,Drain the shredded cucumber,Put them on the plate for garnishing
STEP 6 Slice the meat and start plating,Garnish with the sauce and scallion

TIPS:
    -Put shredded cucumber in ice water for crunchiness
    -Adjust the sauce to your taste

    鮑魚雞粥

    材料:
    新鮮鮑魚8隻
    急凍雞扒2塊
    白米3/4膠嘜

    程序:
    1. 大火在煲內煲滾清水1升。
    2. 白米,清水浸5分鐘。
    3. 雞扒,清水解凍。
    4. 鮑魚,用不鏽鋼羹,從它的嘴刮出鮑魚肉,然後除去內臟。
    5. 水已煲滾,加入白米,大火滾起,繼續攪拌,避免黐底。
    6. 粥滾起後,轉慢火,放一雙筷子在煲上留一條縫隙,避免滾瀉。
    7. 鮑魚肉,加入生粉1湯匙,捽乾淨,清水沖洗乾淨,擎乾水。
    8. 雞扒已解凍,倒去水分,用粗鹽1湯匙乸15分鐘,清水沖洗乾淨,擎乾水,用廚紙索乾。
    9. 雞扒,切去脂肪,切粒。
    10. 雞粒,加入調味料:
    a. 胡椒粉半茶匙
    b. 雞汁半湯匙
    c. 生粉1/4茶匙
    撈勻。
    11. 粥已煮成稀飯,加入滾水至適當稠厚度,攪勻。
    12. 粥已滾起,加入雞肉,轉大火至再滾起,放鮑魚,再煮2分鐘。
    13. 完成,倒入大碗內,可享用。

    Abalone chicken porridge

    Ingredients:
    Fresh abalone 8 Nos.
    Frozen chicken steak 2 Nos.
    Plain rice 3/4 measure cup

    Steps:
    1. Heat up water 1L at high flame in pot.
    2. Plain rice, soak in tap water for 5 minutes.
    3. Chicken steak, defrost in tap water.
    4. Abalone, get the flesh with a stainless steel spoon. Remove the intestines afterwards.
    5. Water boils up, add in plain rice. Boil it up at high flame. Continue stirring.
    6. Turn to low flame after boils up. Put a pair chopsticks between the pot and its lid avoiding boil over.
    7. Flesh of abalone, add in tapioca starch 1 tbsp, rub until it is clean. Rinse thoroughly. Drain.
    8. Chicken steak has been defrosted, pour away water. Season with cooking salt 1 tbsp for 15 minutes. Rinse thoroughly. Drain. Dry with kitchen towels.
    9. Chicken steak, cut off the fat. Dice it.
    10. Season the chicken:
    a. Pepper 0.5 tsp
    b. Chicken sauce 0.5 tbsp
    c. Tapioca starch 1/4 tsp
    Mix well.
    11. Porridge has been cooked in form of congee. Add in appropriate amount of water to a suitable thickness. Mix well.
    12. Porridge boils up, add in chicken. Turn to high flame until boils up again. Put abalone, boil for 2 minutes more.
    13. Complete. Pour into a big bowl. Serve.

    材料:

    無花果6粒
    鮮淮山半斤
    南杏2兩
    美國華盛頓蘋果2個
    陳皮1片

    處理:
    1. 南杏,清水浸
    陳皮,清水浸。
    無花果,清水浸。
    2. 大火在煲內煲滾1升水,放西施骨出水。
    3. 鮮淮山,清水洗淨,用毛巾包住,輕手刨去皮。
    4. 西施骨已出水,清水洗乾淨,放入煲。
    5. 南杏、陳皮及無花果,清水沖洗乾淨。
    6. 放南杏入煲。
    7. 無花果,1開2,放入煲。
    8. 陳皮,刮去囊,放入煲。
    9. 鮮淮山,切一片片,放入煲。
    10. 蘋果,清水洗淨,1開4, 去芯,放入煲。
    11. 在煲內加入清水3升半。

    烹調:
    1. 大火煲滾。
    2. 滾起後,轉中慢火煲90分鐘。
    3. 西施骨,已煲了1小時,另一邊,用清水浸魚腥草15分鐘。
    4. 魚腥草,清水沖洗乾淨,擎乾水。
    5. 湯已煲了1小時15分鐘,加入魚腥草,轉大火,滾起後,轉中慢火煲20分鐘。
    6. 湯已煲好,熄火,焗15~20分鐘。
    7. 完成,可享用。

    Houttuynia cordata soup with fresh yam and Washington apples

    Ingredients:
    Houttuynia cordata 0.5 catty
    Pork bones 1.5 catty
    Dried figs 6 Nos.
    Fresh yam 0.5 catty
    South apricot kernels 2 taels
    US Washington red apples 2 Nos.
    Dried orange peel 1 pc

    Preparation:
    1. South apricot kernels, soak in tap water.
    Dried orange peel, soak in tap water.
    Dried figs, soak in tap water.
    2. Heat up water 1L at high flame in pot, soak the pork bones.
    3. Fresh yam, rinse with tap water. Wrap it with a towel. Peel it lightly.
    4. Pork bones, has been soaked for a while, rinse thoroughly. Put into pot.
    5. South apricot kernels, dried orange peel and dried figs, rinse thoroughly.
    6. Put kernels into pot.
    7. Divide each dried fig into 2 shares, put into pot.
    8. Dried orange peel, remove sacs, put into pot.
    9. Fresh yam, slice it and put into pot.
    10. Apples, rinse and divide each apple into 4 shares. Remove cores. Put into pot.
    11. Add in water 3.5L into pot.

    Steps:
    1. Heat up at high flame.
    2. Turn to medium~low flame after boils up. Boil for 90 minutes .
    3. Pork bones has been boiled for 1 hour, soak the houttuynia cordata in tap water for 15 minutes.
    4. Rinse the cordata thoroughly. Drain.
    5. Soup has been boiled for 1 hour and 15 minutes, add in cordata. Turn to high flame, turn to medium~low flame after boils up. Boil for 20 minutes.
    6. Soup has been cooked well, turn off fire. Leave it for 15~20 minutes.
    7. Complete. Serve.

    白汁蘑菇芝士牛仔骨意大利粉

    材料:
    急凍牛仔骨1磅半(6件)
    磨菇湯1罐
    磨菇片1罐
    芝士2片
    意大利粉(500克)1盒
    青瓜2條
    蕃茄2個

    處理/程序:
    1. 大火煲滾1鑊水。
    2. 牛仔骨:
    a. 清水解凍,用廚紙輕手索乾。
    b. 加入黑椒蒜鹽1茶匙,兩面搽勻,醃3分鐘。
    3. 水已煲滾,加入鹽1茶匙。
    4. 扇形放意粉,冚蓋,大火滾起後,轉慢火煮大約3分鐘,打開蓋,攪動一下,冚蓋再煮2分鐘。
    5. 另一邊,大火在鑊中燒熱油1茶匙。
    6. 放牛仔骨在鑊內,煎1分鐘,反轉另一面再煎1分鐘。
    7. 牛仔骨已煎好,放上碟。
    8. 意大利粉已烚好,擎乾水。
    9. 在鑊內,蘑菇湯加入半罐清水,大火煮滾及攪勻。
    10. 在意大利粉上,放2片芝士。
    11. 蘑菇汁已煮好,加入已擎乾水分的蘑菇片,煮至大滾。
    12. 蘑菇汁已煮好,淋在意大利粉上。
    13. 加入已預先冷凍的切片蕃茄及青瓜伴碟。
    14. 完成,可享用。

    Ingredients:
    Frozen beef short ribs 1.5 lb (6 slices)
    Mushroom soup 1 can
    Sliced mushrooms 1 can
    Cheese 2 slices
    Spaghetti (500g) 1 box
    Cucumber 2 logs
    Tomatoes 2 Nos.

    Preparation/Steps:
    1. Heat up a wok of water at high flame.
    2. Beef short ribs:
    a. Defrost with tap water. Lightly dry with kitchen towels.
    b. Add in black pepper garlic salt 1 tsp. Mix well and season for 3 minutes.
    3. Water boils up. Add in salt 1 tsp.
    4. Put spaghetti and cover up the wok. Boil up at high flame, turn to low flame cook for 3 minutes. Stir it. Cover up the wok again and cook for 2 minutes more.
    5. On the other side, heat up oil 1 tsp at high flame in wok.
    6. Put beef in wok. Fry for a minute. Flip it over and fry for a minute more.
    7. Beef shorts ribs have been cooked well, put on plate.
    8. Spaghetti has been cooked well, drain.
    9. Mushroom soup, add in half can of water. Heat up at high flame in wok and mix well.
    10. Put 2 slices of cheese on top of spaghetti.
