You’ve probably read the posts. In varying degrees of bluntness, people have expressed their less-than-satisfied experience at the final phase of the @restaurantmirazur X @mandalaclub.sg pop-up (I’m sure the price of $574 per pax, excluding drinks, added to their disgruntledness). I have to concur. Perhaps it was all the hype that raised my expectations but the meal, which was based on the theme of “Fruits”, was not what I expected a restaurant awarded “World’s No. 1” by the #worlds50best in 2019 to deliver. In spite of the above, I will focus on the positives for the remainder of my post because that’s just who I am 😊 So here in random order, are what I enjoyed about that evening: 1. The service: The front-of-house team gave their all. They were charming, engaging and knowledgeable. It was nice to see a familiar face as well (hi @clongalong). 2. The canapé of toasted brioche with tamago and scallop sandwich topped with cep mushroom in espuma and sliced form was delectable. 3. My group had nothing but praises for the torteau crab with umami jelly and a touch of yuzu. I’d heard another table’s was over-salted but ours tasted fine. 4. I was quite taken with the sharp flavour contrast of the dish showcasing chayote, clams, baby squid, shimeiji mushrooms and white beans topped with an espuma of yuzu and burnt lemon. 5. My favourite course from the dinner was the one named “Lycopersicon Esculentum”. In a pool of intensely umami tomato liquid was a slim piece of seared fatty tuna belly which melted in the mouth. 6. I found the pre-dessert more striking than the actual dessert. Simple and elegant, it was a well-crafted creation of dragonfruit, mango sorbet, yuzu ganache, mango cubes and matcha powder. 7. The company - The three folks I had the pleasure of dining with: @momofuku, @safarislim and his wife @dorislimsg, definitely made a difference to me leaving the pop-up in a good mood.
