🇨🇳 豬油撈粗面 Pork Lard Oil on Thick Egg noodles, Guangzhou-Cantonese style. 豬油撈麵 is ubiquitously common up in GZ, with most Menus carrying it, and most Wonton shops carry a whiff of the pork lard oil in the air... due to both their larger amount of Pork used in the Wontons and also Tradition of recipe. *Ironic thing is this Aroma doesn’t always carry into the taste like here, which smelt great indeed but turned out blandish 🤔🐷. In HK, #英記美點小食 is addictive and much more powerful than this shop in GZ. For your comparison, HK’s Sham Shui Po’s #長發麵家 is even worse and has no aroma & no Pork lard oil taste, despite advertising to be so (even if its ok tasty from the soy mixture 😀) 英記 has really set a high standard for this Cantonese recipe.. In fact I could also find some similarly satisfying Pork Lard oil flavor in some Japan Kurume 久留米 Ramens too, so miss those!
