The only way to describe the control of flavour and texture of cooking vegetable by Alain Passard is a gift from God. Take this “simple” salad, I still remember its flavour: the greens are bitter but with the caramel sauce, the magic appear: the caramel sauce is a combination of sweetness and savouriness, and it becomes a flavour triangle with the bitterness, the salad become multi-dimensional. The bitterness becomes very elegant under the influence of the sweet, salty and buttery caramel sauce. The flavour became intricate, the bittersweetness brings out the freshness of the vegetables. Simple yet delicious is the most difficult to achieve and this salad hits all the right notes.
