Today we are so happy to introduce a cheese master who is the founder of “The Cheese House”, to teach you and me how to distinguish the cheeses.
不同芝士製作過程的目的是:
(1)透過調節芝士的水分、酸度(pH)以及脂肪、蛋白質和礦物質(鈣)等比例來達到最佳的芝士結構
(2)在微觀水平上建立起芝士的正確結構;
(3)讓芝士熟成到完美程度。
而我們就可以根據芝士基本製造程序分7大家族,包括:

2018-06-03 07:49:17Some of you might know that Roland and I just came back from a short vacation in Tokyo. That explains why we're so crazy about Japanese food recently because we are missing Japan so much. Here's a very simple stir fry noodle dish - Black Pepper Seafood Udon that I'm sure you will enjoy.

Ingredients:
Serves 4 - 6 pax
3 packets of udon
1 broccoli
200g of prawns - de-shelled & de-veined
200g of squid
3 cloves of garlic - chopped
1.5 pieces of red onion - sliced
1 carrot - shredded
Some choy sum
0.5 cup of water
2 tablespoons of premium oyster sauce
3 tablespoons of low sodium light soya sauce
1 tablespoon of dark soya sauce
1 tablespoon of grounded black pepper
0.5 tablespoon of sesame oil

2018-02-04 08:15:38We love this recipe because it tastes just like Sharks fin soup and yet no sharks were harmed. Cook this yummy soup instead of Shark Fin Soup and the earth will thank you. This fish maw & seafood soup is an excellent dish to be added on your reunion dinner menu. Both fish maw and sea cucumber absorb the flavours of aromatics and sauces very well, making them perfect to be added in soups or gravy based dishes.
Fish maw is dried fish air bladder. Rated as one of the precious Chinese ingredients along with abalone & sea cucumber, fish maw is very nutritious and is also full of collagen. Best of all, it’s free of cholesterol. Many Chinese believe that consuming fish maw will help improve their complexion.
Despite its name, sea cucumber is actually not a plant. They are marine animals and are found on the sea floor worldwide. Although the Chinese has long considered sea cucumber as a delicacy, it is only in the recent years that science has validated their health benefits effects. Sea cucumber has shown therapeutic values such as wound healing and anti-cancer.

Ingredients:
Serves 8
1.5 litre of chicken stock
25 g of fish maw (before soaking)
1.5 pieces of sea cucumber
200 g of crab meat
1.5 tablespoons of oyster sauce
175 g of prawns - de-shelled & de-veined
Thicken the soup up with potato starch solution (you can mix 2 teaspoons of potato starch with just enough water to dissolve them)
2 beaten egg

家族1.酸凝新鮮芝士 ( The Acid-coagulated Fresh Cheese)
“新鮮芝士”通常是指在30-32°C下,沒有添加或很少凝乳酶而酸凝結的芝士。這些芝士或多或少沒有熟成且其濕度水平超過60%。這些新鮮,奶油狀,可口融化的芝士可以立即食用!
例如:Corsican Brocciu,Ricotta ,Feta
家族2 天然外皮芝士 ( Natural-rind cheeses)
在這家族中,我們會發現主要是山羊奶芝士、牛奶(Sainte-Marcellin)或羊奶芝士(Pérailde brebis)。我們可以通過它們自然產生的皺皮來識別它們。這個芝士家族通常具有新鮮,美味,乳白色的香氣!
例如:Sainte-Maure de Touraine,Chabichou du Poitou或Valençay。
家族3 橙皮芝士 (Bloomy-rind cheeses)
在熟成過程中,將黴菌Penicillium Camemberti噴在芝士上,然後在外皮上生長並形成帶有蘑菇的柔軟白色毛毯香氣。

在生產過程中,將在麵包或實驗室培養的青黴Roqueforti添加到凝乳中。因為青黴需要氧氣才能均勻生長,在熟成過程中,會在芝士上戳孔,
例如:奧古涅(Bleu d'Auvergne),洛克福(Roquefort)或戈貢佐拉(Gorgonzola)
