What I enjoy most about VEA meals is that every dish is memorable, as opposed to those multi-course meals where dishes blend into each other in my foggy memory. 🦀The first dish of golden tomalley piqued by Chinese vinegar completely blankets bite-sized cheong fun, the char of which provides an extra dimension of flavour. 🦐Similar crustacean notes of comfort arrive in a concentrated prawn sauce which pools elegantly under the signature crispy sea cucumber before being spritzed with Chinese wine. 🐠Another signature uses fatty ma yau lifted by the sour cabbage and slight tingle of peppercorns in the sauce. The perfectly crisp skin contrasts starkly with the succulent flesh which practically melts in the mouth. 🐑The classic Aveyron lamb is uprooted from its usual European dressings and given Northern Chinese flavours, with a hint of cumin and sweetness of red kuri squash, the latter of which adds a finishing touch and lifts the entire dish. Second serving of lamb comes in the form of pleasantly pungent lamb brisket rice. Thinking the meal could not get any better, another climax was reached with the 🍐pear tart with - wait for it - BLACK TRUFFLE ICE CREAM. And when I say black truffle ice cream, I mean a perfectly creamy scoop of what tasted like an entire forest’s worth of truffles. Super potent stuff and I could easily go through a full pint of these - if not for the fact that 150g of truffle per litre probably doesn’t come cheap 😅 However, this was not decadence for the sake of decadence as the black truffle worked extremely well with the velvety and clean sweetness of the pear. Overall, the perfect way to describe this meal is [I’ve run out of synonyms for “intense flavour”]. Thank you @chefvickycheng for another amazing meal!
