2021-03-06 08:30:00When I was young, I used to work for a Chinese restaurant in Singapore as a waitress. One of the most frequently ordered dishes was drunken prawns. At the restaurant, live prawns were used and the protocol was to douse the prawns with alcohol before adding them to the boiling stock. We couldn't get hold of live prawns but we adopted the same idea and made this dish at home. While I'm sure drunken live prawns would taste much better, Roland's method is easier for any home cooks to replicate at home.

Drunken Prawns 醉虾
Ingredients:
Serves 8 pax

Marinated prawns/shrimp
-------
600g (21.2oz) prawns/shrimp
125ml (0.5 cup or 4.2 fl oz) Chinese cooking wine (Shaoxing Huatiao wine)
Soup stock
-------
1L (33.8oz) chicken stock
20g (0.71oz) yu zhu 玉竹 Fragrant Solomon's seal
10g (0.35oz) dang gui 当归 Angelica Root
3 slices young ginger
8g (0.28oz) dang shen 党参 Poor Man's Codonopsis
2 red date (remove seed & cut in halves)
2 stalks of spring onion (use only the white stem)
125ml (0.5 cup or 4.2 fl oz) Chinese cooking wine (Shaoxing Huatiao wine)
0.5 teaspoon salt (or to taste)
0.5 teaspoon sugar
1 tablespoon wolfberry 枸杞

電飯煲素湯
合掌瓜玉竹紅腰豆湯：
材料：
合掌瓜2個
玉竹1兩
紅腰豆1兩
腰果30粒
南杏半兩
蜜棗3粒
水2公升
鹽少量
處理：
1. 玉竹、南杏、紅腰豆、腰果及蜜棗用滾水浸10分鐘。
2. 合掌瓜，洗淨皮，切好，起芯。
3. 腰果、南杏、紅腰豆及蜜棗，沖洗乾淨擎乾水，放入電飯煲。
4. 玉竹洗淨，放入電飯煲。
烹調：
1. 加2公升水入電飯煲。
2. 用煲湯功能，煲2小時。
3. 加入少許鹽，可飲用。
(Vegetarian soup in rice cooker)
Cashew soup with angular solomon's seals and chayote :
Ingredients:
Chayote 2 Nos.
Angular solomon's seals 1 tael
Red kidney beans
Cashews
Sweet apricot kernels 1/2 ta el
Preserved dates 3 Nos.
Water 2 litres
Salt little
Preparation:
1. Angular solomon's seals, south apricot kernels, red kidney beans, cashews, and preserved dates to be soaked in water for 10 minutes.
2. Chayote, rinse skin,
and remove seeds.
3. Cashews, south apricot kernels, red kidney beans and preserved dates to be rinsed thoroughly. Hang dry then put all the above in rice cooker.
4. Rinse angular solomon's seals, then put into rice cooker.
5. Put 2 litres of water in rice cooker.
6. Use "porridge/soup" function, to cook soup for 2 hours.
7. Add appropriate amount of salt, serve.

鳴子百合
Variegated fragrant Solomon's seal
ナルコユリ(鳴子百合)
學名：
Polygonatum odoratum (Miller) Druce. var. pluriflorum (Miq.) Ohwi 'Variegatum'
花材名 : 鳴子百合
庭園中低調的生長，大家都不知道他在哪裡？
因為這些像是小鈴鐺的花朵極為可愛，但它都躲在葉子的背面。
找些年在日式插花教學的時期，花藝老師常用的材料，鳴子百合又叫做｢斑葉萎蕤｣，在國內的園藝栽培市場中，是以切葉為其主要生產目的，作為插花之搭配素材。
它的葉片排列得井然有序，是我非常喜歡的觀葉植物。
秋冬的時候會枯委進入冬眠，每年春天開始冒出新芽，喜歡明亮但要避免夏季艷陽直射，因為陽明山地屬潮濕，特別適合種在樹林邊之處。

Today is Solomon's birthday, can't believe he is 12 now. Took him to a steak house for lunch yesterday, and bought him a cake tonight. We were hand in hand on the way to getting the cake, felt a bit sad that my little boy is so big now, and will be holding other girl's hand soon. Love you forever, Solomon!
