Hey, I hope you've been well during these crazy times. Sometimes changing just the slightest thing about your day or in your room/environment could already lift your spirits. I redid my room (previous video) and this time I did a little glow up session. It really helped with getting out of this endless cycle of being at home all day with an unusual day rhythm. The weather over here has also been so gloomy and I can't even catch a bit of sunlight because I'm inside working from the moment the sun rises till the moment the sun sets.. It's important to keep yourself busy with whatever you enjoy doing and hopefully we will soon be able to enjoy life as we know it.

2020-09-30 21:22:49We headed down to Ramen Champion at Bugis+ to demolish a MASSIVE 12LB bowl of Tsukemen. Tsukemen, or Japanese Dipping Ramen, is a variation of Japanese Ramen where the noodles and soup are served separately. You dip the noodles in the separated broth, which is much stronger tasting and concentrated than your usual ramen. It is usually accompanied by standard ramen sides like chashu and ajitsuke tamago (marinated soft-boiled eggs).
Ramen Champion specialises in ramen, hosting a number of different ramen booths at their outlet. They are known to host annual ramen tasting competitions among their different booths. They recently started offering Tsukemen, so we decided to check it out. When we arrived at Ramen Champion, we were met by a Japanese chef, Horikawa, who heads the outlet, giving us faith in the authenticity of the Tsukemen.
My 12LB challenge was loaded with ramen noodles, ajistsuke tamago, chashu, bean sprouts, shredded cabbage and nori seaweed. On the side was the broth itself, lightly garnished with spring onions. The broth was a deep orange-brown colour and thicker than your usual ramen broth. The flavour was complex and intense, heavy on umami and salty notes. I noticed numerous ingredients being added to form the base before being blended but the staff were reluctant to reveal anything specific other than the broth being based off chicken and pork bones. Only a light dipping is required to capture the right intensity for your noodles and it could easily overwhelm an unwary eater.
For the sides, the chashu were blowtorched and cooked well. The tamago were perfectly soft-boiled, disintegrating easily at the slightest pressure and slightly salty from the soy bath used. The ramen itself was the most unique part, thicker and a lot chewier than your usual ramen or even your run-of-the-mill Chinese-style noodles. The Chef who invented this knew exactly what he was doing, with the thick noodles being an exceptional pairing with the heavy broth. Noticeably, almost half the bowl was actually made up of the vegetables.
This was a straightforward challenge for me even with the strong flavour of the broth, as I tend to love my ramen. It would be very worthwhile to try this interesting spin on ramen regardless of your view on ramen, but be sure to dip sparingly!

2020-08-16 20:30:03For this video, we went down to Ho Ho Chimek where they assembled a beautiful Bossam platter for me to devour. Ho Ho Chimek is an authentic Korean restaurant located in East Village that specialises in Korean Fried Chicken while also offering a host of other delectable Korean cuisine. For this challenge, I was offered a secret menu Bossam (Korean Pork Belly) option, together with Kimchi Fried Rice and Jajangmyeon Noodles, that were assembled beautifully onto my giant plate.
Bossam is a unique Korean style of eating involving boiled pork belly served with a number of condiments that you then wrap up in a lettuce leaf into a neat little package. For myself, I was given kimchi, garlic, Bibimbap sauce and spring onions. On its own, the pork was reminiscent of char siew, but slightly fattier and sweeter. Eaten with all the condiments in a wrap, the flavours truly complemented one another with the kimchi and garlic tempering the cloying flavour of the pork together with the satisfying crunch of the lettuce.
The Kimchi Fried Rice was topped with fried eggs and had the distinct tangy flavour from the kimchi juice added. It was specked with kimchi and chicken luncheon meat, with the meat adding a needed savoury dimension with each bite. The Jajangmyeon noodles, a noodle dish topped with a thick black bean sauce and bits of pork, was not overpowering in the slightest as is common for poorly done Jajangmyeon, with the unique black bean flavour and juicy chunks of pork.
This was an enjoyable challenge with a good bit of variety, although the unctuous pork became rather overwhelming towards the end especially with my refusal to eat it as a wrap. I also tried their famous Korean Fried Chicken which was extremely crispy and flavourful on the outside, while juicy inside. The soy-garlic marinade really shone through. Additionally, the Bossam is apparently not publicised because it is very difficult for the owner’s mother to create, although it is one of their best offerings.
Do visit Ho Ho Chimek to get your Korean cravings satisfied! They will be offering a slightly smaller version of this platter for $68 from this Friday onwards, with the addition of Tofu Stew, and aptly named “OPPA Zermatt’s Platter”.

In all seriousness I recently went to get my heart checked out because I noticed something wasn’t quite right…
This made me get very anxious which as a result increased my heart rate even more when I had these concerns.
So to make sure everything was 100% I did a full heart check up at the doctors and luckily I was given the all clear 🙏
Apparently I was just super paranoid and had a little bit of anxiety which mentally made me think my heart was beating faster than usual 😅
But when I spoke to the doctor, he mentioned that some people he had seen have had certain health related issues that they have simply ignored for years , not got checked and then as a result suffered long term effects because they didn’t get checked out / treated sooner.
I don’t know why but in the last few years I’ve heard many really unfortunate stories about young people passing away due to health related issues that they had no awareness about…
I know somebody that had no previous health problems that sadly passed away in their sleep because it turned out they had something wrong with their heart..😞
So I suppose the point I am trying to make here ..is that you can’t put a price on your health. It’s probably the most important thing you can try and personally look after.
So even if you feel the slightest pain or if you feel like something isn’t quite right…don’t wait around and assume everything will be ok.
Just get checked out so that you can be reassured & also to make sure there is nothing wrong 🙏
Life is very short nowadays…and we should always try to live it to the fullest by being aware of our health!
Don’t take any chances 💪
