The original version of the stinky pot had also continued to evolve and improve, just getting so so good. The stinky tofu there was sourced from a lady who made stinky tofu with all natural ingredients and fermentation (most of the stinky tofu outside are full of chemicals to create a artificial “fermented” taste). Chairman team deconstructed the tofu, mixed in salted fish (sounds like double stinkiness but actually it turned the smell more approachable), water chestnut for texture and scallion for aroma. These deconstructed and reconstructed stinky tofu were cooked in a pot with the most delicious spicy soup base, lots of vegetables such as cabbage that absorbed all the flavors. The chicken offals which included livers, gizzards, hearts, intestines, etc had more 鮮味 while the lamb offals which included the tripes, stomach, spleen, liver etc had a more pungent offal flavors. Since I just posted about the four hands, I will post some new dishes that came out since my last series. 鴛鴦臭豆腐豬雜鍋 Yin Yang Stinky Tofu Pig’s Offal Casserole (発酵豆腐と豚内臓の鍋) was an one off dish came from the development of the four hands (not sure yet if they will put on permanent menu). As an inspiration from the pork used in Jeju in Korea, Danny wanted to build the stinky tofu casserole with pig’s offals as well. The first trial version of the stinky tofu pot came with chicken offal (which I posted last year, in Nov). It has gradually evolved to include either chicken or lamb offals and received such positive feedbacks that now it is available anytime you reserve it. They tried a prototype with different set of pig’s offals and fried vs non fried stinky tofu. In the four hands they went with the one without, and soup base was added with fermented kimchi. This dish came with various pig’s offals including stomachs, big and small intestines, my favorite lungs (soooooo yummy) and Fallopian tubes (soooooo yummy too 😝, see the last three pics). I enjoyed both types of stinky tofu so I asked for “Yin Yang”, which means both fried and non fried stinky tofu included (pic 3-5). The fried one and normal one gave two different textures, soooooo good. This dish is awe-dropping level delicious! I literally have dreams of the stinky tofu pot, despite not necessarily a big fan of stinky tofu. STINKY TOFU SUNDUBU-JJIGAE Kimchi, Pig's Offal 石鍋臭豆腐 韓國泡菜、豬雜 @ Hansik Goo x Chairman (Aug 14-15, 2021) Stinky tofu, epoisses, durian, these are food that I put in the “Love It or Hate It” category. Normally I order dishes with these elements only if the whole table enjoy it. Two years ago Chairman took the bold action and offered their fried stinky tofu on menu. Their stinky tofu came from a lady in New Territories, probably the only person who still makes stinky tofu through all natural fermentation without artificial and chemicals. They deconstructed it and reconstructed it again by added salted fish (double stinkiness), water chestnut and scallions. So it is a one-of-a-kind stinky tofu that you can never find elsewhere. The responses to the fried tofu was so overwhelmingly well that they came out with a second dish - stinky tofu casserole with either chicken offals or lamb offals, lots of scallions and vegetables (see last pic and video). This was one of the most delicious dishes ever came out from Chairman, even many of my friends who don’t normally eat stinky tofu love the dish 😮. So that was how the original inspiration came to this dish. In Korea, there are many jigae (stew)- kimchi, seafood, tofu, etc often served in stone pot. The two casseroles have remarkable resemblance as they both involve spicy and fermented elements. And that was how this collaboration dish came about - a stinky tofu kimchi sundubu jigae with Chairman broth base x Kimchi broth, stinky tofu, cooked kimchi, pig’s offals (to continue with the pig’s theme) and clam. And Bam 💥 it was so good 😍 and made so much sense. I was thinking why no one think of putting kimchi and stinky tofu together in the past because they were literally BFF.
