今回はガナッシュベースの濃厚でしっとりしたクラシックショコラを作りました。
ふわふわのガトーショコラも美味しいけどズッシリとリッチなものも良いよね。
シンプルでとても美味しかったです。

[材料] 15cm ケーキ型 1個分
チョコレート（55%）：75g
生クリーム45%：75g
ココアパウダー：45g
発酵バター：55g
A - 卵黄：60g
A - グラニュー糖：25g
B - 卵白：90g
B - グラニュー糖：80g
薄力粉：22g
[作り方]
1.チョコレートを刻み、粉類をふるっておく
2.生クリームを沸かしてチョコレートのボウルに入れて混ぜる
3.ガナッシュを作って40℃以下まで冷ます
4.室温に戻しておいたバターをガナッシュに入れて混ぜる
5.ココアパウダーを入れて混ぜる
6.卵黄をグラニュー糖とブランシールしてガナッシュに入れて軽く混ぜる
7.薄力粉を入れてよく混ぜる
8.卵白とグラニュー糖で作ったメレンゲを混ぜる
9.ケーキ型15cmにペーパーをセットしておき、オーブンを150℃に予熱し30分焼く
10.焼きムラを防ぐ為にケーキ型180度回転させ、130度で60分焼く。焦げ防止にアルミを上に置くと良い
