    Lai Yee's Kitchen - Mel's Nasi Kerabu Ikan :
    I love Nasi Kerabu for the refreshing green and all those salted flavours together. It is basically a rice salad. It is quite a messy dish but super appetizing. It comes from Kelantan. Basically, what you're eating is a very healthy herb and rice meal with the addition of grilled chicken or fish. Nasi Kerabu is made up of a few components, each prepared separately and assembled on a plate right before serving. There is the blue rice, a fried fish sambal, a herb salad and assorted accompaniments such as salted egg, fish crackers and winged bean. The fish sambal is made up of deep fried cencaru fish that has been deboned and flaked, crispy Geragau shrimp and toasty grated coconut, all bound together by a spicy sambal mix.

    Ingredients for 10 pax:
    * Kerabu Rice:
    . 4 cups rice
    . 18g dried blue pea flower
    . 2.5 litres hot water
    . 3 stalk lemongrass
    . 5 kaffir leaves
    . 50g crushed ginger
    *Cencaru Fish Sambal :
    . 2 cencaru fish
    . Oil for deep fry

    *Rempah:
    . 3 tbsp oil
    . 1 big onion
    . 1 whole garlic
    . 1 tbsp toasted belacan
    . 1 lemongrass
    . 100g toasted grated coconut (roughly pounded)
    . 8 tbsp dried fried crispy Geragau shrimp (roughly pounded)
    . 1tbsp sugar
    . 1 tsp salt

    * Sambal:
    . 10 presoaked dried chilies
    . 1 whole garlic
    . 1 whole Onion
    . 2 tbsp Belacan
    . 3-5 tbsp sugar
    . oil
    . 1cup Tamarind juice

    * Accompaniments:
    . 5 cups fresh bean sprouts
    . 6 stalks thinly sliced laksa leaves
    . 2 stalks thinly sliced torch ginger flower
    . 5 stalks thinly sliced lemongrass
    . 2 finely sliced turmeric leaves
    . 10 pcs four angle beans (thinly sliced)
    . 1 shredded cucumber
    . 5 Salted Duck Egg (I made my own, for recipe, check my ICTV video)
    . Some Fish crackers
    . 2 tbsp Sambal belacan
    . sugar and salt to taste

    You can basically take any herbs from your own garden to add on to create your own version. Once you are ready to get started on your plate of Nasi Kerabu, mix everything together so you can taste the layers of flavours and contrasting textures in each bite. Sedap!!

    Do you know what STINKY TOFU is? If you have been to Hong Kong and Taiwan night markets, you will know what this is. I have been craving for these tofu. My neighbour bought me some from the SS2 shop, I have tried and found them not smelly enough and just more herbal. I think they are more Taiwanese style. So I told them, let me try to make my own Hong Kong style stinky type. So I went on doing some research on how we can make the fermentation. Guess what, I must say I am super happy and excited over the stinkiness in my house. Weird but true. I felt like I was in a Hong Kong night market! I gave myself a 7/10 mark. Hahaha.

    HK Style Fermentation Ingredients (2.5 litres jar):
    . 1 whole mustard green/spinach, cut
    . 4 to 5 stocks of coriander/spring onions, cut
    . 200 g or more old ginger, sliced
    . 20 to 25 pcs or more fresh prawns for prawn heads
    . 5 pieces of fermented bean curds, mashed. 1 cup rice wine
    . 1 litre rice water (water from washing rice)
    . 1 litre cooled down cooked water
    . 1/2 cup of salt
    * Mix all above into an air-tight glass jar & leave it in your storage for 2 weeks to 1 month. It can get very smelly!!

    For Fried Stinky Tofu Ingredients :
    . 20 pcs of small to medium size firm tofu (not the soft tofu)
    . oil for frying
    * Soak the tofu in fermented water overnight in a sealed container overnight in the refrigerator.

    To serve (dig a whole in the middle of the tofu & add below ingredients) :
    . Spicy sauce or
    . Pickled cabbage or kimchi
    . Cut coriander or spring onions

    My only advice for you all is fry your tofu outside the house or with your hood on full blast! Otherwise you will end up having the night market store smell for 1.5 days like I had. I don't hate it, but everyone in the house was hiding inside their rooms!

    I am glad I found the secret of making this. Hope I will improve this and make them even more smelly and yummier? Yes I will soak the tofu for more than a day. So what is next? I still have a huge jar of Taiwanese fermentation going on. I will be able to try it in 2 weeks. I am determined to let it ferment for a month. Will let u all know soon.

    Yes they are stinky when u prepare them and fry them up. But they taste far better than they smell. It has many health benefits like helping the digestive system and treating cold symptoms. According to some studies, eating stinky tofu can also help prevent osteoporosis, lower the risk of prostate and breast cancer, and reduce cholesterol. Hmm, interesting. I love them no matter what!

    I was craving for hawker food recently. Especially what I am cooking today. Fish head noodles soup 鱼头米粉 (Yu Tao Mai Fun) is a popular hawker food in Malaysia. It is believed to have originated from the Teochews. I was mentioning Hokkein but actually it is more Teochew as I suddenly remember the pickled plum and salted vegetable are very common ingredients for Teochew's dishes, especially steamed fish. It is one of my favourite fish soups with noodles. Here this is my first time trying to cook this. I must say I love it. My kids too. I am proud of myself. LOL!

    Ingredients for 10 pax:
    . 2 kgs grouper fish head, cut into big pieces. U can use any big fish head
    . 2 pcs dried fish
    . 2 pack thick rice noodles
    . 2 pcs pickled mustard/salted veggies, cut into long strips
    . 200 g young ginger, sliced thinly
    . 5 tomatoes, cut into wedges
    . 2 medium or 5 small size tofu
    . 6 pickled plums, mashed or whole pieces
    . oil
    . 5 litres water

    For marination of fried fish head:
    . 2 tsp white pepper
    . 5 tsp salt
    . 4 cup cornflour flour, or tapioca flour

    For seasoning:
    . 2 tbsp fish sauce
    . 1tbsp white pepper
    . salt to taste (optional)
    . 3 tsp sesame oil
    . 1 can or 2 evaporated milk
    . 6 tbsp Shao Xing Wine or more (optional)

    Garnishing:
    . spring onions, sliced or cut

    Add-on: You can always add extra vegetable like Chinese cabbage or Chinese lettuce. Make sure you have this with cut chilis with soy sauce or some sourish spicy sauce. I also love adding fried onions in my soup.

    I will cook this more often for sure.

    I am a 100% Cantonese. Both late Grandfathers came from China Guangdong Province. Growing up with my late Grandma aka Poh Poh was one of the best things since I was born. She inspired me a lot in many ways. She was quite a cook too. Being a Cantonese, soup is a must in our daily meal. She cooked the best soup ever. She used charcoal to cook soup in a clay pot. OMG, I really do miss my late Poh Poh's sweet dessert soup aka Tong Shui too!! So I really want to share her recipes slowly but surely with u all. This is one of the easiest tong shui she cooked for us. Let me show u how.

    Ingredients for 6 small bowl servings:
    . 18 water chestnuts, peeled and chopped
    . 2 eggs
    . rock sugar
    . 1.5 litres of water
    . pandan leaves

    You can serve it warm or cold.

    牛鰍魚排骨湯(高速煲):

    材料:
    排骨1斤
    節瓜2個
    合掌瓜2個
    粟米1條
    牛鰍魚1斤

    烹調:
    1. 排骨,加滾水入高速煲內,出水15分鐘。
    2. 牛鰍魚劏好,洗乾淨,擎乾水。
    3. 節瓜,去皮,1開2。
    合掌瓜,洗淨,去芯。
    粟米,洗乾淨。
    4. 排骨已出水。
    5. 換一個煮飯的內胆煎魚,放魚,加熱15分鐘。
    6. 排骨,洗乾淨,擎乾水。
    7. 換上煮飯的內胆,噴少許油,放魚落煲,加熱8分鐘。
    8. 魚已煎好,灒1升半已煲滾的水落高速煲。
    9. 放排骨、粟米及合掌瓜。
    10. 再加入大滾水至6升。
    11. 再煲40分鐘。
    12. 已煲好。
    13. 用“再加熱”功能煲15分鐘。
    14. 完成,可享用。

    *如果用明火煲,煲1小時至1小時15分鐘就可以了。

    Flathead fish soup with pork ribs with pressure cooker:

    Ingredients:
    Pork ribs 1 catty
    Fuzzy melon 2 Nos.
    Gassho melon 2 Nos.
    Sweet corn 1 No.
    Flathead fish 1 catty

    Steps:
    1. Pork ribs, put boiled~up water into pressure cooker, soak for 15 minutes.
    2. Flathead fish, get it scaled and remove its intestines. Rinse thoroughly and hang dry.
    3. Fuzzy melon. Peel. Each fuzzy melon is to be divided into 2 shares.
    Gassho melon, rinse and remove the seeds.
    Sweet corn, rinse.
    4. Pork ribs, use stainless steel liner, boil up a pot of water have been soaked well.
    5. Change another inner pot which is for rice cooking, frying the fish, heat it up for 15 minutes.
    6. Pork ribs, rinse thoroughly and hang dry.
    7. Change another inner pot which is for rice cooking, spray little oil in pot, put fish, heat up for 8 minutes.
    8. Fish has been fried well. Pour 1.5 litre of boiled~up water into the pot.
    9. Put pork ribs, sweet corn and gassho melon.
    10. Pour boiled~up water into pot up to 6 litres.
    11. Cook for 40 minutes.
    12. Soup has been cooked well.
    13. Use "reheat" function to cook for 15 minutes.
    14. Complete. Serve.

    *If a gas cooker is to be used, cook for 1 hour to 1 hour 15 minutes is fine.

    木耳雪耳蘋果清潤湯:

    材料:
    木耳1兩
    雪耳1兩
    華盛頓蘋果2個
    無花果4粒
    果皮1片
    南杏20粒
    煲湯骨2磅

    《無需調味,根據個人口味增減鹽分。》

    處理:
    1. 木耳、雪耳,清水浸軟。
    2. 南杏、果皮及無花果,清水浸2分鐘,清水沖乾淨。
    3. 煲滾1鑊水,放豬骨出水。
    4. 蘋果洗乾淨,1開4,去芯。
    5. 雪耳已浸軟,拿起無花果、果皮及南杏。
    6. 豬骨已出水,洗乾淨。

    烹調:
    1. 放豬骨入煲。
    2. 無花果,1開2,放入煲。
    3. 果皮,去囊,放入煲。
    4. 南杏,放入煲。
    5. 雪耳,剪去芯,切細舊。
    6. 蘋果,放入煲。
    7. 木耳,切細舊,及切去硬的部分,放入煲。
    8. 加入3升水。
    9. 大火煲滾。
    10. 滾起後,轉中慢火,煲1小時。
    11. 完成。

    Apples moisturizing soup with fungus:

    Ingredients:
    Black fungus 1 tael
    Snow fungus 1 tael
    Washington apples 2 Nos.
    Dried figs 4 Nos.
    Dried orange peel 1 pc
    Sweet apricot kernels 20 Nos.
    Pork bones 2 lbs

    《No seasoning necessary. Table salt can be added upon personal favorite. 》

    Preparation:
    1. Black fungus and snow fungus, soak in tap water until it turns soft.
    2. Soak south apricot kernels, dried orange peel and dried figs in tap water for 2 minutes. Rinse thoroughly.
    3. Soak pork bones in a wok of boiled~up water.
    4. Rinse apples. Divide an apple into 4 shares. Remove the cores.
    5. Snow fungus has been softly soaked. Take out dried figs, orange peel and south apricot kernels.
    6. Pork bones has been soaked well. Rinse thoroughly.

    Steps:
    1. Put pork bones into pot.
    2. Dried figs, 1 fig divide into 2 shares. Put into pot.
    3. Dried orange peel, remove sac, then put into pot.
    4. Put kernels into pot.
    5. Snow fungus, cut away the centre of it, cut into small pieces.
    6. Apples, put into pot.
    7. Black fungus, cut into small pieces and cut away the tough parts. Put into pot.
    8. Add 3 litres of water into pot.
    9. Heat up at high flame.
    10. Turn to medium~low flame after boils up. Boil for 1 hour.
    11. Serve.
