Seriously, this ain’t no slap-together ‘Phat grapao’ (basil stir fry) to simply fill bellies, this meal is good enough for any authentic mid-range restaurant, looking to please well paying patrons. The Oh Jacki gang, made Nasi Lemak Chicken, a dish originating from Malay cuisine that consists of fragrant rice cooked in coconut milk and pandan leaf and Sambal (hot spicy red sauce) with garnishes like cucumber slices, small fried anchovies (ikan bilis), roasted peanuts, and hard-boiled or fried egg. The combination is just wild, and sometimes - dare I say it - a welcome relief from the household Thai food, as it combines elements of crunch, sweet, savory, spice and artomatics in a totally different way.

If anything, for those who have lived or visited Singapore or Malaysia, it really hits you in the ‘feels’. Gosh, I miss traveling. And although there are many many variations of this dish, Oh Jackie's version leans closer to the authentic but with special touches. That batter! It will make you weep inside with happiness. It's so good. Fluffy and light, but crispy and robust, unlike the Thai fried chicken, which is also addictive but the crispy skin is denser and deeply saturated with oil. The Jacki O version texture feels closer to a tempera. Then there’s the Sambal, Ok, so I’m no expert in that department but there is a great amount of depth and flavour in one tiny lick. It’s concentrated love. Yes! We loved it that much, like coming “home” to a place which is not our home. You’ll probably love it too, so why not give it a try. Pizza Hut latest flavor is this local inspired Nasi Lemak pizza featuring
spicy chicken chunks, egg, cucumber and ikan bilis, all topped with Pizza Hut’s house brand sambal sauce 🍕

Both the spicy chicken and the sambal sauce weren’t too spicy and the sauce leans towards the sweet side. One can add on more sambal sauce or Ikan Bilis according to personal preference and this will be available till 14 July

Once I arrived Taichung for a proposal mission,
Northern Taiwan was in chaos. Confirmed cases and isolation order suddenly became so familiar.
It feels like there are two forces pulling me at two extreme ends
I was at a place in between internet news and greenery
Tearing me apart, putting me in the fight of bliss and fear.

Although we are a whole entity in this society, I believe the world leans more towards individuals
Reading articles of the professionals working at the emergency room and listening to the news of the war zone like front line medical battleground, I was thinking about the sequence of my editing about holding hands and putting on a ring.
Listening to the bittersweet comments of my friends about being relaxed now that he’s jobless, I was hoping I could have a long break from my clinic.
What about you?
We get to know other people’s lives more or less but all we can feel about is only the state we are in.

I want to help cure patients in need
I want to be able to make those who don't wear masks abide the rules
I want to bring box after box of vaccine back
Like an ant trying to shake a big tree.
.
Stop acting like it’s the end of the world
If my position is at the emergency room or heath department, I would do my duties properly
If we are not, we should not add to the honourable ladies and gentlemen’s burden
Wear our masks properly as if the virus is in the air;
Keep our distanced with each other as if the person next to us is a patient without symptoms;
Sanitise our hands and avoid touching our noses and mouths as if our hands are in contact with the virus.

We cannot control what others do
But we can manage ourselves
Aren’t we creating a healthy community collectively when each of us fight the virus accordingly?
We are all in it together!
Let’s fight the virus! Taiwan and the world!
