I've loved his drinks when he was at Idlewild, and now Andy Griffiths @theandygriffiths has taken over Neon Pigeon as the new bar manager to create cocktails that incorporate Japanese spirits and elements. 🔸 The Kosupure, adorably served in a pigeon-shape glass, is one made from the Japanese Midori. With laird's applejack, fino sherry, and acid, it is refreshing and zesty without being cloyingly sweet. The bubbles also works well to refresh the palate especially with some of the spicy Korean-forward dishes we have here.
