Please don’t ask me why it had taken me so long to return to Jade Palace but I am thrilled Caren had suggested going there for our CNY dinner. Honestly, I’ve always felt this restaurant in the basement of Forum Galleria is some sort of a secret the Chinese gourmands of Singapore would prefer to keep to themselves. Perhaps because it already packs enough of a crowd nearly every day. Anyway, I think Jade Palace’s success can be attributed to the following reasons. Number one: The food here is VERY GOOD. It’s mostly classic Cantonese dishes cooked to ultimate tastiness without too much fuss over presentation or the need to ingratiate new-fangled ingredients. Hence, at our dinner, we first attacked a heap of the tastiest crunchy-fried frog legs. Perfectly seasoned and juicy within, they were served with crisp paper-thin ginger slices. We then dug into a sizzling claypot of chunky fried fish, beancurd and eggplant before falling upon a stirfry of kailan with two kinds of fragrant preserved Chinese sausages, and a platter of large, buttery-soft cubes of #Wagyu beef in black pepper sauce. But prior to all that, we did our #LoHei with a Shunde-style of #YuSheng where Japanese hamachi, shredded cucumber and spring onion were tossed in a sesame oil-based dressing. It was so delectable I had multiple helpings of it. For dessert, 年糕(Nian Gao) in two ways, Osmanthus Jelly and a super fluffy Ma Lai Go were served. The fact that they weren’t too sweet was a big plus for us. Reason number two why I reckon #JadePalace is beloved by so many: Mr. Ho. This charismatic gentleman is the General Manager and he is exceedingly knowledgeable not only about the food but French wines too. That is why many serious wine-lovers love to dine here as they share a common passion. Thanks to the decades-long friendship between him and Caren, our group had the privilege of indulging in couple of very special bottles during our meal. And this was after a lovely #Taittinger champagne and a most excellent French red brought by Caren and Audrey respectively. Thank you Mr. Ho for the wonderful time.
