美國除夕夜這天來到了紐約的米其林三星餐廳 Per Se
之前拜訪過 Eleven Madison Park
這次便選擇了這家自從紐約有米其林評鑑之後
連續 14 年都榮獲米其林三星的榮譽的法國餐廳 Per Se。

由知名大廚 Thomas Keller 開的餐廳
位於 Columbus Circle 旁邊的 Time Warner Center 頂樓
視野還不錯。

訂位時間一到踏入餐廳
門口一整排服務生歡迎我們到來
並馬上帶我們入座。

首先點了一杯來自法國的紅酒 Domaine Philippe Charlopin "Les Echezots," Marsannay $22
這杯口感相當順滑層次感也很豐富
非常喜歡。

另外點了一份 Wine Pairing 搭配餐點的酒
有兩個不同的價錢可以選
分別是 $225 以及 $355 的
選擇了比較便宜的 $225
一共有六杯酒搭配餐點。

Per Se 的餐點是搭配好的
主要就是經典的九道菜的菜單以及另外一份適合素食者的 Vegetable Tasting Menu。

一共有九道菜色以及附上的餐前甜點與飯後小餅乾
其中有四道菜可以決定是否要加價更換為更高級的料理。

首先第一道上桌的是用小巧冰淇淋甜筒包的生魚片
就像是鹹的冰淇淋相當開胃有特色。

第一道菜是 Oysters and Pearls
使用新鮮的生蠔搭配魚子醬
調味相當精緻。

搭配的酒是 Bruno Paillard, "Premiere Cuvee", Reims MV
這杯是有氣泡的白酒
很適合搭配海鮮。

這道菜可以加價為 Royal Kaluga Cavier $60
下面是義大利奶凍結和蘋果以及薑片
魚子醬口感清新完全不會鹹膩
讓人印象深刻。

第二道菜是 Salad of Winter Radishes
金桔、燕麥以及番紅花醬
擺盤也很精緻
不過這道稍顯普通一點。

加價可以更改為鵝肝 "Pastrami" of Hudson Valley Moulard Duck Foie Gras $30
一整塊鵝肝搭配精緻的葡萄、開心果以及微辣的芥末醬
同時上桌的是一個非常漂亮的星星造型的各種鹽
包含來自英國、法國、夏威夷、以及印尼不同口味與調味的鹽巴可以沾上鵝肝
超級講究
另外附上小塊的麵包可以搭配鵝肝與沙拉。

第三道菜是 Wild Portuguese Rouget "En Croute D'Ecailles"野生葡萄牙火魚排
上面搭配的是炸的酥脆的魚鱗以及焦糖綠色大蒜醬
魚肉非常鮮美
是我印象最深刻的一道菜之一。

Domaine aux Moines, Savennieres - Roche-aux-Moines 2016
這杯口感清新
是讓人印象深刻的白酒。

第四道菜是 Santa Barbara Spiny Lobster
旁邊附上了火腿、甜紅蘿蔔、朝鮮薊
龍蝦一大塊而且非常Q彈有嚼勁
吃起來很新鮮。

Chateau de Beaucastel, Chateauneuf-du-Pape Blanc 2016
這杯是典型的來自法國的白酒
口感稍微乾了一些。

第五道菜是麵包 Bread and Butter
非常健康的麵包包著椹果、杏子、葡萄乾等
旁邊附上特色奶油。

第六道菜是 Four Story Hill Farm "Supreme De Poularde"
火腿配上特色醬汁。

這道菜加價可以升級成 Hand-Cut "Tagliatelle" $125
義大利麵另外由服務生端上木盒裝的頂級黑松露
現場磨成片狀撒上義大利麵上
一打開木盒就馬上聞到松露的香氣
這道松露非常值得加價品嘗！

搭配的是 Domaine Philippe Charlopin "Les Echezots," Marsannay 2012
這杯正是我單點的紅酒
讓人印象深刻
我很喜歡這一瓶。

第七道菜是 48 Hour-Braised Beef Short Rib
燉煮了超過 48 小時的牛小排
旁邊搭配菠菜與醬料
牛肉非常軟嫩
很值得一吃。

Trefethen, Cabernet Sauvignon, Oak Knoll district, Napa Valley 2015
來自納帕山谷的 Cab
這杯非常絲滑順口。

第八道菜 Gougere
圓形的濃郁起司塊包著黑松露
吃起來很像中式蛋黃酥。

接著就是一次端上桌的甜點了
包含了 K+M Chocolate Trifle 結合奶油硬糖與百香果的巧克力蛋糕
Baba Au The Vert 血橙龍井茶小點
Banana-Creme Fraiche Sherbet 香蕉奶油冰淇淋
以及一份咖啡冰淇淋。

Castello di Ama, Vin Santo del Chianti Classico 2013
搭配的甜點酒是經典的義大利甜點酒
與各種蛋糕冰淇淋很搭。

另外還有一大碗甜甜圈與有小豬造型的馬卡龍
下面還有巧克力
每一樣都非常精緻。
最後在附上任意挑選的自製精緻巧克力
結束這完美的一餐。
Per Se 整體服務也很棒
幾乎完全不用招手服務生馬上就會滿足各種需求
是一家值得一試的米其林三星餐廳。

It is an Old Story, that happened by chance.
Along a narrow alleyway, in the most ancient district of Tainan City, is an old blue building called Chi Kan West House. It is a fusion of classic Taiwanese and Western styles, having traditional octagonal windows embellished with silver frames and ironwork.
Chi Kan West House is not just the resurrection of an old building back to its heyday, but more the voice of an opera,singer vocalizing a 94-year-old song of Tainan and the inheritance of a culture.
Chi Kan West House is a four and a half-storied blue building hidden in a narrow alleyway of the prefectural city of Tainan. It is a blend of Taiwanese and Western architecture. When stage one was constructed in 1924 it was one story tall but in 1953 stories were added to become the second tallest building in the city, Hayashi Department Store being the first.
The building’s renovation into a four-story building was because of the filial piety of the Hong Family brothers for their mother. She was not only elderly, but also had bound feet, and the location and height of Chikan enabled her to watch the Taiwanese Operas performed on stage at Fort Provintia.
However, time goes by, and all good shows must end. Eventually, this old house became a long-neglected building with its elegance fading away.
It was not until 2014, under strange and unimaginable circumstances that a married couple bought the old house. With a large investment, exceeding their budget, they insisted on refurbishing instead of demolishing it. To preserve it, they had to recruit local elderly masters whose carpentry skills will soon to be lost. It was finally restored into a historical site, embellishing again the glory of its original appearance. Now Chi Kan West House is again unique among its contemporaries not only reborn, but also revitalizing its neighborhood.
