I was so appreciative of this very special meal at FLNT by Chef Lamley. I made a request to have lobster sashimi, and he kindly agreed and specially indented this live lobster. This lobster dish came in two parts:

First, as sashimi in the cover video. The bright orange flesh was firm and sweet, and came with ponzu, shoyu, and wasabi as condiments. The flavour is closest to that of botan ebi, but this has a much firmer flesh. We even loved the Japanese ice plant served on the side.

The lobster subsequently made an appearance again, as Chef Lamley used the head for a lobster donabe. That seafood soup in the donabe packs a punch with its heady crustacean flavour. It was so strong that I had to ask Chef Lamley for the secret behind the broth.

It's definitely not the end of this dish, because I'll love to have it again. And when I do, which will be soon, I'll be looking to Chef Lamley to grant me this request again :p
