    As the result of widespread reporting of aviation accidents, you probably know that all modern aircraft carry flight recorders, commonly (and erroneously) known as a “black box”. If the plane crashes, the flight recorder provides investigators with vital information of what happened.

    But few of us know who invented the flight recorder. It was an Australian scientist, Dr David Warren, working at the Aeronautical Research Laboratories in Australia, who thought of having a voice recorder in the cockpit. At first his bosses did not like the idea, but he persevered. After working on it secretly for five years, he got the chance to present it to a panel of experts in London. Dr Warren never received any royalties for his invention, and recognition only came late in life, when he was in his 70s-80s.

    I hope that young Singaporeans will have the same ingenuity and persistence when solving life’s problems. Perhaps one day, our own children or grandchildren will invent something as impactful for all humankind!

    Chinese Steamed Garlic Squid w/ Glass Noodles 蒜蓉冬粉蒸花枝
    Ingredients:
    Serves 4 pax

    2 bulbs chopped garlic - can be grated as well (erroneously mentioned as 2 cloves in the video)
    25g (0.9oz) chopped young ginger
    1/2 teaspoon sugar
    1 tablespoon light soy sauce
    2 tablespoon oyster sauce
    40g (1.4oz) glass noodles (can be increased to 80g [2.8oz])
    350g (12.5oz) calamari (squid)
    60ml (2 fl oz) cooking oil
    1 tablespoon Chinese cooking wine (Shaoxing Huatiao wine)
    A handful of chopped spring onion

    Ingredients:
    Serves 5 - 6

    1 tablespoon of oil
    2 pieces of salted fish preserved in oil ( sorry it was erroneously stated as brine in the video— should be oil)
    5 pieces of dried chilli - soaked & roughly chopped
    4 slices of ginger
    1 red onion - sliced
    1 stalk of green onion (cook the stem part first)
    500g of pork belly - sliced
    1 cup of Chinese white rice wine
    2.5 cups of water
    1.5 tablespoons of oyster sauce
    1.5 tablespoons of premium dark soya sauce
    0.5 teaspoon of sugar
    1 stalk of Chinese parsley
