    The roots of this dish are Indian cuisine, in which foods are customarily seasoned with various spices.

    主人との遅めのランチタイム。

    今回は
    3種のカリーを。

    一つは大きめエビのクリームを効かせたスパイスカリー

    もう一つは和牛のミンチスパイスカリー

    そしてもう一品は
    いわしのマスタードカレー
    ベンガル風

    付け合わせにはアチャールやカード、ウールガイ、フレッシュトマトにパクチーやジンジャーなどなど。

    もちろんお米は長粒米を今回は長めに。

    とても美味しく
    酸味とのバランスがまた素晴らしいスパイスカレーを堪能しました。

    常にその時その時の
    いただきたいメインで作り上げるカレーは絶品でございます。

    主人と自家製のインド料理を楽しむ日々。

    撮影が終わり
    料理がずらっとたくさんあっても
    私たちはまた料理して
    美味しくいただきます。

    今回はフィッシュをメインに
    いくつかのおかずを用意。

    幅が広がるのは
    食材をスパイスを
    とことん揃えたので
    お店に行くよりも美味しく仕上がります。

    二人で
    『やっぱり原価が高いよね、これ出すと思ったら(笑)』
    なんて話しながら。

    リラックスタイムでのお食事は
    アバウトに仕込みますが
    外食以上の外食の仕上がりに
    大変美味しい時間で
    仕事の疲れも吹き飛ぶのでございます。

    本当に美味しい
    スパイスカレー。

    Here’s another meatless Chinese dish that I’m excited to introduce to you! Lei Cha is a traditional Chinese Hakka dish that was invented during the Han Dynasty. The aromatic green soup consists of oolong tea leaves, ground roasted nuts, ginger, Thai basil leaves, coriander leaves, mint leaves and salt. The rice, either white or brown, is topped with all kinds of nutritional vegetables such as leeks, spinach, Chinese cabbage, choy sam, shiitake mushrooms as well as peanuts and tofu. This dish is customarily vegetarian, although versions containing dried shrimps for extra flavours can also be found today.

    Every story is born of a place and of a people. To keep a story alive means to acknowledge the life of the place and people. The Kelabit people have a tradition of telling stories through song, the storyteller sitting for nights on the floor of the raised longhouse, singing an epic.

    The last two generations have lived through rapid transitions: from practising headhunting, ceremonial tattooing and animal sacrifices, to embracing Christianity in the 1930s; from having zero electricity to 24-hour solar-powered energy. Parallel to this was the introduction of formal schooling, money and deforestation. Whilst the storytelling traditions could not carry speed with the vast changes, one thing remained constant for the Kelabit: hard work.

    Re Lekuah is an old song rich with figurative meanings, many of which are lost and open to speculation. Literally though, the song gives insight to the hard work that young women had to do in the village, and perhaps a desire and longing for something more. Placed in an urban, contemporary setting, life isn’t much different.

    Customarily, an elder would transmit the oral tradition to her children and grandchildren, but Alena’s grandmother didn’t live long enough to pass on her stories. Alena learnt this song from Tepu’ Do’o Ayu, asking her blessing to rearrange and to share the song outside the community - whatever it takes to make people listen, is the reply.

    Re Lekuah, the music video, presents dualities: drawing parallels and contrasts across time (old versus young; past versus present) and space (rural versus urban).

    Originating from Sichuan, garlic paste pork belly or suan ni bai rou is a dish of tender pork belly slices accompanied with a savoury and piquant garlic dip. The sauce is also more garlicky than spicy, as you would expect a typical Sichuan dish to be.

    Suan ni bai rou literally means garlic paste white pork. It may not sound like the most appetizing dish but it sure looks tantalising – bite sized poached pork pieces laid out against the stark garlic sauce, calling out to be picked up, dipped and delivered straight to your mouth! The term “white” pork is derived from the pale coloured meat as the pork belly is poached with ginger and spring onions to lightly flavour the meat. After poaching, allow the pork belly to cool slightly as this will help with slicing. This dish relies heavily on its tasty garlic sauce, so it is important that the pork belly is subtly seasoned to allow the fragrant garlic paste to shine.

    Although garlic paste pork belly is customarily served chilled, it can also be served warm to your preference. This versatile dish will not fail to impress as a side, or even as a main dish with rice!
