    Some people ask me if I like【Yakiniku Great, originally from Tokyo 🇯🇵】Sheung Wan or H Code SOHO shop better?

    Actually for taste its similar enough despite different managements, very good but not the best Yakiniku level anyway. My recommendation is always to order "A La Carte" at Great, as somehow I am not into their Tasting Menu selections 👀, which seem half budget planned if you understand how Wagyu parts are butchered & priced in Japan, & a lot of it involves Marketing. Its a bit more convincing if we select ourselves.

    "SOHO H Code" does have more professional Chefs helping you cook, also they defrost 解凍 the Wagyu better.

    "Sheung Wan" somehow is more relaxing with friends, service is more friendly casual. It depends what kind of environment you desire that instance!

    星期六唔好講太多掃興嘢, 說回【妖怪 ʸᵒᵏᵃⁱ, ᶜᵉⁿᵗʳᵃˡ, ᴴᴷ. ᴼᵖᵉⁿᵉᵈ ᵇʸ ˢᵘˢʰⁱ ˢᵃⁱᵗᵒ ᴴᴷ ᵍʳᵒᵘᵖ, ʷⁱᵗʰ ˢᵃⁱᵗᵒ ˢᵃⁿ ᵃˡˢᵒ ⁱⁿᵛᵒˡᵛᵉᵈ ᶠʳᵒᵐ ᵀᵒᵏʸᵒ】這邊有兩位日本九州師傅坐鎮, 還有背後 Sushi Saito 支持. 有用備長炭火燒, 但炭香味暫時今次食不太明顯住

    初開業當然有好有唔好, 例如我哋也聽到其他人的經驗, 說有幾串火喉燒得不夠好. 主要係太生或者燒得不夠香. (令我諗起一開頭 Tori Sho 燒鳥 鳥匠 初開的時候也是同一個問題, 現在已經逐漸改進好了很多!)

    I think we were lucky as our Grilled sticks were actually quite decent, and tasted fairly authentic Japanese, despite the chefs origins it tasted more Tokyo > Fukuoka to me in seasonings & cuts. The Negima ねぎま probably gives this clue away too.

    Items we ordered, some we ordered or avoided due to Friends recs:

    •Tsukune with Soft Cartilage $46 🌟. Good nankotsu bones texture within

    •Neck $45. Our stick was Grilled better than our neighbors stick, it was visually apparent. It's decent

    •Chicken Tail ぼんじり $38. This was undergrilled today, despite not looking so. The chicken tail/bum meat's aroma & taste wasn't too extracted yet

    •Chicken Oysters ソリレス $60 🌟 . This cut used local HK chicken instead of Japanese chicken like some other skewers, which is expected due to the way its butchered, which fresher chicken is better & easier. Pretty enjoyable

    •Chicken & Leek ねぎま $46. This was surprisingly tasteless, in both chicken & leek. Don't know what happened to it. 🙉😕 I also noticed that if u eat this in the Tasting Course, it only comes with 1 piece of Chicken (Oyster instead of Thigh) & 1 piece of leek. Which wouldn't be a ねぎま concept anymore, if ur used to this word representing the はさみ word play concept. Not the Maguro Negima interpretation 🤔

    •Platinum Pork Roll with Egg $45. Done very neatly. There are a few in town serving this recipe, comparatively speaking this pork didn't carry a lot of taste & a bit dry chewy. Unfortunate, but fixable in long term..

    •Manganji Pepper 万願寺唐辛子 $45 🌟

    •Chicken Liver $42 🌟. For Hong Kong context its pretty decent. In HK, for chicken liver I do like Birdie's version, albeit that does taste very Kyushu/Fukuoka in style too

    ♦️當紅炸子雞 半隻 HKD $268 Cantonese Fried Chicken. Half Bird, using Fresh local chicken 🐔 Very very good chicken flavor & moisture, but just right with the chicken fat. Skin here also highly enjoyable, it's not the hyper crackly type, but one which is paper thin & just on the verge of turning into a Crispy wafer. Very elegant, plus the Chicken is butchered up very neatly presentable 🗡🐔 ~ an attribute I value highly. As this is a skill only highly trained professional chefs & into meticulous details carry.. It doesn't fool anyone.

    ♦️🌱 竹笙太極扒時蔬 HKD $108. Bamboo Piths & Enoki Mushrooms with Seasonal Vegetables, 豆苗 Pea Shoots this time.

    材料:
    雞扒 300g,焗薯仔 1,蔥
    醬汁:韓國大醬 2 tbsp,料理酒 2 tbsp,蒜蓉 1/2 tbsp,麻油 1/2 tbsp,蘋果汁 4 tbsp,砂糖 1 tsp,胡椒粉 適量

    做法:
    1. 將雞扒?花,令雞扒更容易入味
    2. 將韓國大醬,料理酒,蒜蓉,麻油,蘋果汁,砂糖,胡椒粉拌勻
    3. 加上雞扒上,醃30分鐘
    4. 煎雞扒
    5. 上碟,配以焗薯仔,蔥



    ▪ INGREDIENTS:
    300g Chicken
    - Soybean Paste Seasoning: 2 Tbsp Soybean Paste, 2 Tbsp Cooking Wine, 1/2 Tbsp Minced Garlic, 1/2 Tbsp Sesame Oil, 4 Tbsp Apple Juice, 1 Tsp Sugar, 1 Pinch Pepper
    1 Baked Potato, Scallions

    ▪ DIRECTIONS:
    1. Make cuts in 300g of chicken meat while cutting the tendons. Make a cut near the skin area by using the end of the knife.
    2. Add 2 Tbsp soybean sauce, 2 Tbsp cooking oil, 1/2 Tbsp minced garlic, 1/2 Tbsp sesame oil, 4 Tbsp apple juice, 1 tsp sugar and a pinch of pepper to a bowl. Mix it all together to make soybean paste seasoning.
    3. Spread the sauce over each side of butchered chicken and marinate for 30 minutes.
    4. Add oil to heated pan and cook marinated chicken.
    5. Add baked potato, grilled chicken and scallion on a plate.
