    今早開咗大爐焗麵包,之後趁機焗咗個原味戚風蛋糕。北美嘅座地式焗爐一般只有上火(roast/broil)或下火(bake),因此焗蛋糕嘅時候,EC通常頭15分鐘用下火,之後開上火焗至上色。要將啲爐火上上下下左左右右校來校去才焗到想要嘅顏色,真係好麻煩!

    Woven rice noodles and grilled pork on this beautiful Spring day! {bánh hỏi thịt nướng}

    Resharing a favorite! 💕
    VHC Grilled Lemongrass Pork Recipe ————————————————————
    Ingredients:
    3 lbs pork belly (pork shoulder or butt cut)
    1 shallot - minced
    1 lemongrass stalk - minced
    4 garlic cloves - minced
    3 red chili peppers - minced
    1/2 tbsp ground white pepper
    1 tbsp sesame oil
    1 tbsp fish sauce
    1/2 tbsp sea salt
    1 tbsp sugar
    1/4 cup organic honey
    **Optional:
    1 tbsp annatto oil (for color)

    Steps to make the sauce:
    1. Combine all minced ingredients together in a bowl.
    2. Add the remaining ingredients in the bowl. Mix well until sugar is dissolved.
    3. Reserve about 1/4 cup of sauce in a separate container. Keep this container in the refrigerator until you are ready to cook the meat.
    4. Slice the pork meat into thin slices.
    5. Add meat to the sauce bowl. Make sure to massage and coat meat evenly.
    6. Refrigerate for at least 2 hours or overnight for best results.

    Notes:
    1. Before you cook the meat, soak bamboo skewers in cold water for at least 5 minutes. Add meat to skewers and cook based on instructions provided below.

    Cooking instructions:
    1. Oven - set oven at 375F and cook for 10-15 minutes. Rotating the meat every 5 minutes and basting the meat with the sauce that was set aside. Increase oven to low broil to give the meat a nice golden brown finish. Keep a close eye on it so the meat doesn’t burn and dry out.
    2. Grill - cook meat on medium heat. Rotate often and basting with the extra sauce that was set aside. Cook until meat is golden brown with some charred finish around the edges.

    試做脆皮燒腩仔

    之前整燒肉係跟朋友學,材料簡單一件五花腩用鹽酒和五香粉醃,篤針後用錫紙包住再在皮上放好多鹽,入雪櫃,然後焗。出來都唔錯咖,呢度有片,2014年拍下留念👇🏻👇🏻

    我好想再做外脆內多汁的燒肉,更想簡單易做適合懶散的我,皮脆方法平日只用厚鹽也有掃醋水,現在進化到醋加梳打粉😳,真的嗎?不是用來洗煲?用來做燒腩仔?我又試吓先....

    所以見家中找到一塊好薄的三層肉,汆3分鐘水,索乾水份,再在肉面切兩刀,不用太深,切到一層肉就夠。

    用鹽、胡椒粉、五香粉、薑汁酒、海鮮醬攪拌,然後醃肉,不要掂到豬皮。豬皮面用叉篤窿篤滿個表面。

    包上錫紙,在豬皮上掃上(醋和梳打粉拌勻),再灑鹽,入雪櫃雪了8小時,焗之前攞出來放室溫。

    我用蒸焗爐Steam bake 425F焗了20分鐘,轉Steam Broil 475 10分鐘,最後Broil 500F 5分鐘,攞出來放涼一陣攪掂~

    我今朝返工前用了半小時預備,跟放工前叫老公從雪櫃攞塊肉出來,返到家一焗就攪掂,真係簡單方便,出來燒腩皮脆肉多汁,好開心,老公好滿意,當然有改良空間啦,想食得好些就要花多些心思。

    呢幾年興氣炸鍋做燒肉,都好好食咖,但就個蚊香洗死我~最開心蒸焗爐有self-clean功能,焗完抹一抹就攪掂~
