Continuing my post regarding @atsunrice's Sunday Luxe Dinner, where sidestreams (called spent) that would have been discarded are upcycled in this six course dinner. 🔸 The amuse bouche uses spent long jing tea leaves from Si Chuan Dou Hua, spent coffee from Huggs, and spent chips. Wonderful upcycling of these familiar food that we typically see discarded. 🔸 In the second course, moromi was used to season the foie gras. Moromi is a typical waste from soya sauce production, and one factory alone generates 90 tonnes of moromi each month. At Sunrice thus collected them from Tai Hua soya sauce factory for this dish. 🔸 The third course is shiroyaki unagi with Oscietra caviar, in a soup made from banana stems collected from Tekka market, and ginger spent oil. 🔸 I've talked about the fourth course in my previous post, with noodles made from okara, a typical waste from tofu production, and sauce from crustacean shells collected from Jumbo Seafood. 🔸 The fifth course uses the same okara in a mille feuille, and ice cream from the vanilla pods (the ones that are discarded after vanilla beans were extracted). The last set of petit fours uses coffee and tea spent from Gong Cha, and coconut husks. 🔸 It's an interesting dinner event where their R&D Chefs showed us how we can reimagine the future of food. Candlenut @candlenutsg was a casual and spontaneous meal and it turned out to be my favorite. The Peranakan flavors are so tempting! I totally adore the spices and acidity that have merged with the Chinese cooking. Do order the “Ah-ma-kase” menu to get the best of everything, presented in the format of family sharing—Main dishes are served all together at once with rice, giving you the true sense of how Chinese/ Baba Nyonya people eat.  @malcolmleeee  若以心情舒爽的程度而言，Candlenult 是這趟新加坡行我最喜愛的一餐。配備一副中式舌頭，熟悉或新奇我立馬偵測得出，Candlenut有好些似曾相識的滋味，煎煮炒炸配白米飯，卻讓一把香料、一杓椰奶、幾滴青檸改頭換面，國色天香，長成明豔妖嬌濃烈奔放的姿態，媚惑著，挑逗著，我抵抗不了。  娘惹菜融合中式烹調與馬來口味，是中國人移民至馬來半島始誕生的混血料理。這些華人移民大多來自福建，也有來自潮州、廣府，落地生根成為「土生華人」（Peranakan），而在星馬，土生華人的另一稱呼是「峇峇娘惹」（Baba Nyonya），峇峇是男性，娘惹是女性，峇峇娘惹文化則從馬六甲往北傳至檳城、泰國南部，往南擴至新加坡、印尼。  Candlenut的創辦主廚Malcom Lee就是生於長於新加坡的峇峇。原本念企業管理的他不想坐辦公室，拿到獎學金轉去新加坡廚藝學校At-Sunrice學烹飪，一畢業就與母親一起開了以娘惹菜為號召的Candlenut，自2010年至今，2016年起掛上米其林一星，也在同年搬遷至現今位於COMO Dempsey‭ ‬的漂亮空間。  Candlenut可單點可套餐，不熟悉娘惹菜的我們四人選擇後者─「Ah-ma-kase‭ ‬」，不是日文的omakase（廚師發辦）喔，而是俏皮的「阿嬤套餐」。讀著菜單感覺很長，真正上桌不過是四種小點心、一款湯品、二道甜點（這樣看起來也不少），中間一大串八個項目全是主菜，而且一齊上滿！我非常喜歡這種「合菜」的形式，這才是原本華人吃飯的方式，魚肉配菜與白飯攪和著吃，這才熱鬧歡喜。在偏fine dining的設定下，主菜的階段一起上飯菜，曼谷知名的「Bo.lan」也是這樣做，Candlenut是我體驗過的第二例，這種形式也許可以給中餐廳、台菜館做參考。  #candlenut #malcomlee #peranakan #singapore #singaporeeats #michelin #selftaughtgourmet #selftaughtgourmet_singapore
