📍Cube House, Rotterdam Finally see cube house in person, I still remember that when I worked at Airbnb, we listed our favorite listings in the email signature area, and this one is definitely on my bucket list. Delivered Cow 経產牛 Delivered cow carpaccio, beef tongue, oyster meunière (by Florilege) @ Hertog Jan x Florilege collaboration dinner, Florilege, Tokyo (11.26.2016) _ This dish should not be unfamiliar to those who have been to Florilege. A huge size oyster wrapped with a thin slice of beef tongue and beef carpaccio with a sauce made with oyster. The beef Florilege uses is about 13 years old and often considered too old (retired) and unsuitable for eating, but they want to stress on sustainability and believe old beef can still be delicious when done properly (and it was delicious here!) _ The bowl for this one was beautifully constructed with an asymmetrically slanted valley which seemed particularly matching with this carpaccio oyster "roll".
