I've been to Buona Terra a couple of times, and I have a few favorites - they're the carabinero squid ink risotto; wagyu carpaccio; and all of Chef Denis' pastas. There's now another dish to add to my list, and it's roasted duck. 🔸 Before we started the meal, I overheard them introducing the main courses to the next table - "for main course, you can have A5 wagyu, or pigeon". And I stared at the menu that Chef Denis had planned for me, and wonder why am I only getting duck. But turned out, that was the best option of the three! (btw I've also tried their pigeon and wagyu during previous visits, also good!) 🔸 The smoky aroma first drew me in, before I was awed by the textures of the duck, with three distinct layers - first the thin exterior crisp, followed by the juicy fats, and finally the tender flesh. Celebrated @siewyan49's birthday at Buona Terra, and we were welcomed with new snacks (since the last visit) to start the meal - scallop tartare with caviar in butter cone; and kegani crab with avocado in squid ink tart. And of course they have to keep the crowd-favorite Just Tomato (not pictured), which is a gazpacho in a bite size sphere. 🔸 Our dinner was amazing as usual, with two courses from previous menu I specially requested for; I've missed them. Terra Signature Uni Pasta. Uni pasta is becoming a common dish due to its popularity, but Terra's uni pasta is different. What sets it apart is the use of karasumi, a mullet roe that was cured and dried, lending it's savory oceanic flavours to the uni.
