Have you tried purple curry before? There's a very familiar aroma similar to the yellow curry that we are used to, so I have expected this spice to be from Asia. But purple curry is actually from Ingo Holland, and it's a lovely spice with natural acidity to cut through the strength of the flavour of this pigeon. This purple curry is presented as a crust on the pigeon, which is cooked medium rare just the way I liked it. And it's very juicy and tender, partly because it is cooked in hazelnut oil in a way to retain its moisture. And things get even better, because the best part of this dish is the pigeon leg pictured behind! 🔸 To recap, this is part of Alma's six anniversary menu.
