    Closest thing to Japan 🇯🇵 I’ve had in a while. What was just a 4.5 hour flight away now seems unthinkable. Good thing we have restaurants like @sushiyoshihk and chefs like Hiroshi-san to remind us of the amazing food, culture, and ingredients Japan has to offer.

    Michelin-starred Chef Hiroki is one of the first internationally renowned Japanese chefs to return to the city during the pandemic to unveil his new 19-course menu. Unlike traditional sushi chefs, Chef Hiroki experiments with modern cooking techniques with the best Japanese ingredients making his Omakase menu one of a kind.

    1️⃣ Pictured is Hiroki’s kaki sushi aka the best oyster 🦪 I’ve ever eaten — sous vide paired with his signature sweet soy sauce.

    2️⃣ Akagai / Blood Clam — instead of using rice, Chef Hiroki creates a nigiri that elevates the texture of yam with egg yolk

    4️⃣ Kinmedai / Splendid Alfonsino Sushi

    Golden Aji from Amakusa

    •サメガレイ
    Roughscale Sole, with Meat & Engawa fin. Slightly torched

    •🌟甘海老 唐墨
    Sweet Prawns with shaved Karasumi Mullet roe

    •🌟甲イカ.エゾバフンウニ
    Signature 2 thin pieces of Kou Ika Cuttlefish, sandwiched with Hokkaido Sea Urchin

    •酢の物: 刺身くらげ.キュウリ "ビニールハウス栽培"
    Jellyfish with green house Cucumber. For a Sunomono dish, this was way too sharp acidic, 有啲嗆喉嚨. The Jellyfish quality was very good but this off balance really spoiled the quality! 🙄

    •金目鯛
    Kinmedai Alfonsino. Served non-torched on the skin. A bit bland this piece

    •北寄貝
    Hokkigai Surf Clam

    •天然 真鯖 (三重県)
    Wild Saba Mackerel with Shiro Kombu, Sesame. Taste again when considered in unison, was all over the place. The vinegar/salt in the mackerel, the off sweet shari, etc

    •鮪 大トロ 17日熟成
    17 days Aged Otoro Tuna belly. Quite meltingly oily but frankly, not much aging flavors detectable compared to others practicing same

    •バフンウニ ドック
    Sea Urchin in Seaweed 😢. These had nearly no sweetness taste, except for myoban preservatives bitterness, also slightly melty. Weren't told where these came from, but it tasted like those worser Russian Urchins finally packaged in Hokkaido for wholesale. *I understand this is compromised in my Lunch Set, but anyway just saying as it is

    •手巻き 鰤, ネギトロ, ごま
    Hand roll with Buri, Negitoro, Sesame, Scallions etc. Not much character & taste

    •お吸い物 舞茸
    Maitake soup. Decent but surprisingly slightly oily in mouthfeel for an osuimono

    •🌟 青森県 Aomori Apple Sorbet
    This was surprisingly very good, with both fresh & also almost Caramelized apple taste within, complex!

    Overall this $800 Lunch set, especially with a few of my previous Winter dinner bookings cancelled, was good CP Value for sure. It just so happened that I found the tuning of the otsumami/sushi to be a bit all over the place to my liking. This isn't helped by the fact that some seafood they source is unique, but a few tasted farmed, which could not actually handle the extra accent from the added Seasonings which might be trying hard to impress. The Aging didn't had a major effect either! Come if u want to try some unique seafood in HK context. But personally a bit off my usual spectrum range 😬

Using the best fatty fish usually reserved for grilling and sushi, Zagin originally from Osaka 【Zagin 座銀 Happy Valley 跑馬地, Hong Kong】 outlet only is introducing this Spring/Summer flavor for May period. The base soup is intense in both the Fish & also Chicken stock, with almost a sandy texture.. At HKD $198 a set it is extravagant, but bearing in mind this fish is a premium one and also Tai ramen is also all the rage now in Tokyo itself (Kinmedai is not actually a Tai, but even more expensive tho that’s another longer story to explain!..)
