In Chef Ace's second course of the AISA menu ($158 for eight courses), we see the Korean Turbot done sashimi style. This course is named "Seasons", a tribute to Chef Ace time in Seoul where they are very dependent on the seasons, which saw Chef Ace heading to the markets every morning to source for fresh seasonal produce. 🔸 This turbot sashimi has a texture that appeals to the Koreans, as it has a firm texture, with slight crunch. The turbot itself is very clean tasting, so Chef Ace ramped this up with a makgeolli sauce, with a little bit of vinegar and chilli oil, and layered the turbot with lots of kaluga caviar. 🔸 Excellent food by Chef Ace and equally good service by the team led by Akemi. A phenomenal meal by Chef Ace Tan at Stellar 1-Altitude. His latest menu is AISA, his take on progressive Asian cuisine over eight courses that delivers wonderment to my palate through memories of his culinary journey. 🔸 Starting the menu is "Essence", which see the lobster done in three ways (in the same order pictured, recommended to be eaten in the same order): 1. lobster tartare smoked with sesame oil and crab shoyu, then shaped in a rose with pickled black daikon; 2. Aburi lobster atop chicken skin cracker; and 3. Lobster soup with lobster dumpling, using the trims of the myoga and lobster shells.
