Cepelinai (Zeppelin Airship, or Lithuanian Potato-Meat Dumplings)
① Stuffing: sauté garlic and chopped onion, then add mushrooms, ground pork, cook until done, set aside
② Wrapper: Boil one half of potato; grate the rest potato, add a drop of lemon juice to avoid turning brown, then place in a fine-mesh cheesecloth, twist to remove excess water. Be sure to keep the potato water. Mix the grated potato and boiled potato, mix well
③ Form the zeppelins with wrapper and stuffing, carefully place in boiling water, cook about 10 min and the dumplings is floating
④ Sauce-1: On the other pot, bring to a boil the potato water, add corn scratch, sake, rice vinegar, mirin, sugar, minced garlic, minced apple
⑤ Sauce-2: mix well the yogurt and mustard
⑥ Pave sauce-1 in the dish, place dumplings, drizzle sauce-2 at top, sprinkle parsley and pan-fried chopped ham
Ha ha I know the sauce-1 is not the traditional version, just trying to avoid the greasy taste and add different flavors; sauce-2 is to replace sour cream because it’s rare in my place. The outcome is pretty satisfying (to me) 😅

「Cepelinai」(立陶宛馬鈴薯肉丸)
① 內餡:炒大蒜、洋蔥、蘑菇、豬絞肉,先炒熟
② 外皮:一半馬鈴薯剝皮水煮,壓成泥。另一半生的馬鈴薯用果汁機打成泥,加檸檬汁 (防止變色),在豆漿袋擠汁擠乾,薯汁要留下來。然後 1:1 混合生跟熟的薯泥
③ 外皮包餡做成齊柏林飛船形狀 (原文菜名就叫「齊柏林飛船」),放滾水煮到浮起即可,跟下水餃一樣
④ 醬汁1 (鋪在底部):薯汁煮滾,放少許太白粉勾芡,然後放米酒、醋、味淋、糖、蒜泥、蘋果泥
⑤ 醬汁2 (淋在肉丸上):優格跟黃芥末攪勻
⑥ 裝盤後灑芫荽跟煎到脆脆的火腿
以馬鈴薯為主食的國家的典型料理,蠻有特色、有趣的。原版醬汁只用薯汁煮熟勾芡,搭配酸奶油、培根。我研究旅遊部落客的心得普遍覺得太油膩,點一道要兩個人才吃的完,因此加上台灣肉丸的配料 (糖、醋、酒、蒜..),並且以更強力的優格芥末取代酸奶油,很多人討厭的芫荽給他下去啦,培根改成煎過的火腿提供焦脆口感,完成混搭版異國料理,很好吃欸 😋😂
