How to make Glazed Lemon Butter Cookies Recipe
Glazed Lemon shortbread cookies Recipe
☞ Serving: 10 cookies
✎ Ingredients
☞ For the cookie dough
unsalted cold butter 65g
all-purpose flour 100g
rice flour 25g
powdered sugar 25g
a pinch of salt
milk 15g
☞ For the glaze
lemon zest 1pc
lemon juice 8g
powder sugar 40g
✎ Instructions
1. Sift flour, powdered sugar, rice flour and a pinch of salt, then add all dry ingredients into a large mixing bowl.
2. Toss cold butter in the dry ingredients until each side is coated. Roughly cut the butter into small cubes and toss in the flour again, until each side is coated. Freeze for 1 hour.
3. put frozen butter and dry ingredients into a food processor, and pulse a few times until the mixture resembles coarse, sandy crumbs.
4. Add the mixture in a large bowl, pour 15g milk into it and mix well, then use your fingers to quickly rub the mixture until it resembles from flakes to a dough ball.
5. Transfer the dough to a baking paper, cover another paper on top, then roll out to 1cm thick. Freeze for 1 hour.
6. Take the dough out of the fridge and cut it into a 3x5cm rectangle.
7. Preheat the oven to 130°C, bake for 45-55 minutes. Remove and let cool on rack.
8. Zest a lemon in a small bowl, set aside. Squeezing out about 8g of juice from lemon.
9. Make the glaze and garnish. In a small bowl, whisk 8g of lemon juice and 40g of powdered sugar together. Dip the top side of the cookie into the glaze and place it on a wire rack, and garnish a little lemon zest on top to set.

2020-09-12 20:15:01哈囉！大家好，我是 Cassandre, 今天的『食不相瞞』，我們要跟大家分享一款搭配著咖啡或熱茶，會不自覺一口接一口的英式風格小茶點：檸檬糖霜奶油酥餅。(Butter Cookies, Shortbread Biscuits)
檸檬糖霜奶油酥餅是一款非常具有英式茶點風格的小餅乾，這個餅乾的麵糰是源自於蘇格蘭的 shortbread cookies，但食譜做了一些調整，例如加了米粉跟牛奶，傳統的蘇格蘭奶油酥餅一般沒有加任何的液體，口感會比較酥脆一點。
這次分享的這款食譜做出來的餅乾口感則會比較酥鬆，沾上一層薄薄的檸檬糖霜，並擺上些許檸檬刨絲，遠遠的就聞到了香氣；在口味上，除了 shortbread 餅乾飽滿的奶油香氣外，又多了層清新的柑橘氣味，甜甜酸酸的滋味在口中釋放，非常和諧美妙。這是一款非常適合加入自家烘焙的餅乾清單喔，不管是與三五好友的開心下午茶，或是一個人的寧靜午後，細細品嚐，都很適合。

檸檬糖霜奶油酥餅怎麼作呢？
下面是這款檸檬糖霜奶油酥餅的做法與食譜：
☞ 份量: 大約可以烤出 10 塊餅乾
✎ 材料 / Ingredients
☞ 餅乾麵糰
無鹽奶油 (黃油/butter) 65g, 冰的
中筋麵粉 100g
在來米粉 25g
糖粉 25g
一小撮鹽
牛奶 15g
☞ 檸檬糖霜
檸檬刨絲 1顆
檸檬汁 8g
糖粉 40g
✎ 做法 / Instructions
1. 把麵粉、米粉、糖粉、鹽過篩後，放入料理盆裡
2. 將冰奶油放進乾料裡每面都沾上乾粉，然後取出切成小丁狀，再把奶油丁放回乾粉裡和一和 ，送進冰箱冷凍一小時(放冷凍喔)
3. 把結凍的奶油與乾粉倒入食物料理機裡，打成均勻的細砂狀，如果摸起來有粗的顆粒感，可再打一下。
➡ 若家裡沒有食物料理機也可以用手把奶油搓進乾粉裡

4. 把打好的砂粒狀奶油乾粉倒回料理盆，加入15克的牛奶混勻，然後用手以捏握的方式讓它成團，會花一點時間，要有點耐心哦
5. 把麵糰放在烘焙紙上，上面再舖另一張烘焙紙，將它擀成一公分的厚度，然後送進冰箱冷凍一小時
6. 把結凍的麵團分切成 3x5cm 的長方形
7. 烤箱預熱 130°C, 烘烤 45-55 分鐘，出爐把餅乾移到架上完全放涼
8. 刨一整顆的檸檬絲，然後把檸檬汁擠出備用(檸檬汁只會用到 8克)
9. 在盛著糖粉的碗裡倒入 8克檸檬汁，攪拌均勻，拿一塊餅乾輕輕的把表面沾上一層薄薄的糖霜，然後表面放一點檸檬絲做裝餅，等糖霜乾了之後就可享用，但冰過一夜更好吃哦

邊玩邊學！字母奶油酥餅。
雖然我覺得有點太早，不過四歲上的小學預備班已經開始教閱讀和寫字，以閱讀為目的教發音不教字母的傳統讀法、寫字也以連著、躺著的手寫體為主(OS: 難怪歪果人寫字像畫符)，既然有教，虎媽姿態立現，早在幾個月前我們就火速在家學完大小寫，現在不過想些旁門左道找機會碎唸罷了。
(好像又要勸敗了) 101個餅乾模型雖然沒有101次求婚纏綿悱惻，倒是非常實用，學字母、學形狀、學數字... 應有盡有；跟皮蛋說放學回家作餅乾，也許她整天都在期待這件事，下課頭也不回、完全看不上別人還在公園玩，拉著我直接衝回家。
上當了吧，哈哈哈哈哈，作餅乾順便補習；做的是英式傳統奶油酥餅，也就是觀光客愛買的紅色格子狗牌蘇格蘭餅乾，很簡單的原料、沒什麼技巧，玩個把小時、進烤箱十五分鐘出爐，很適合小朋友。
