2014-03-24 15:20:06農曆年期間做了這個簡易食譜:燘豬脷,方法是幾粒蒜頭、一些薑、葱和乾葱,平平無奇的燜豬脷,味道提升了很多,不錯。
如要爆香蒜片或蒜茸煮餸,切記不能用猛火,否則蒜頭易燶,有苦澀味,破壞整個餸的味道。
材料(6位用):
豬脷 2條
蒜頭 3粒(拍扁)
葱 6條
乾葱 6個(略拍鬆)
薑 3片
滾水 3 1/2杯
紹酒 1/4量杯+1湯匙用來灒酒
大孖雙璜生抽 1/4量杯
淘大金標老抽 1 1/2茶匙
碎冰糖 2茶匙
甘草 2片
八角 1粒
花椒 1茶匙
乾香葉 3塊
油 1 1/2湯匙
麻油 1茶匙
茶袋 1個
做法:
1.兩條豬脷汆水20分鐘,取出沖水,用刀將豬脷白色舌苔刮去,洗淨後,嗦乾水,用刀分開肉和豬脷。
2.預備八角、花椒、甘草及香葉。花椒及八角放入茶包袋。
3.用一個深煲,放入油,中火燒熱,加入蒜頭、乾葱、薑及葱爆1 1/2分鐘,灒酒,立即放上煲蓋,待45秒。
4.加入滾水、紹酒、生抽、老抽、麻油、冰糖、甘草、香葉及茶包袋。
5.放入豬脷及豬肉,放上煲蓋,待滾時,轉細火,燜1小時15分鐘,熄火,焗3小時。
6.拿出豬脷,不要豬肉(因已煮得很乾),隔走所有材料,只保留汁,去油,待10分鐘,倒出汁。
7.只需要1/4杯汁,如分量較多,用中小火煮汁至稠。
8.豬脷切厚片,約1/2厘米,倒汁在豬脷上,上菜。

夏天給艷陽曬一曬,整天都身體乏力、精神狀態不佳、食慾下降、心情煩躁,還伴有胸悶、噁心的症狀,身體又輕微的發熱,但又不至於中暑,有人稱這種狀態為「苦夏」,中醫理論認為炎熱季節暑氣當令,暑熱傷了元氣會令人感到不適,暑濕邪氣亦會乘虛而入,尤其平日脾胃虛弱的人,在夏天多吃生冷食物,就會進一步損傷脾胃功能,更容易出現苦夏症狀。
要紓緩苦夏症狀,可以通過飲食調理,首先要保持飲食清淡,少吃油膩、重口味食物,以減輕腸胃負擔。其次可適量進食苦味食物,因為苦味食物多有清心涼血、健脾利尿以及緩解暑熱的功效,例如苦瓜、生菜、萵筍、芫茜、薄荷葉等。適量的酸味食物可以刺激食慾,亦能促進胃酸分泌,例如番茄、橙、士多啤梨等。
如果身體有濕的症狀,包括舌苔白色而濕潤黏膩、大便稀爛甚至黏馬桶、睡醒仍然疲倦不堪等,就要適量祛濕,多吃健脾化濕食物如白米、赤小豆、淮山、薏米、扁豆衣等,每天飲一杯米水,都可以有助強健脾胃,驅走濕氣,回復胃口。

Summer heat leads to lack of appetite
Exposure to summer heat may lead to fatigue and appetite loss, and we may not be in our best mental state which leads to irritability. We may feel tightness in the chest and nausea, yet not to the extent of suffering from a heatstroke. Some would call this condition as “Ku-Xia” in Mandarin, which literally means the bitterness experienced during summer. Theoretically, Chinese Medicine views that the heatwave during the hot season would hurt qi, a person’s internal vigor, allowing the heat from the damp-heat to enter the body. This is especially true in the case of individuals with asthenic spleen and stomach. Eating raw and cold food during summer will further deterioriate the functions of their spleen and stomach, worsening the “Ku-Xia” symptoms.
Through dietary management, we will be able to alleviate the “Ku-Xia” condition. First of all, keep your meals light, avoid eating deep-fried and heavily flavoured foods to reduce the burden on the intestines. Next, consume an appropriate amount of bitter foods, such as bittergourd, lettuce, Chinese lettuce, coriander and mint, as they can flush out the body heat and cleanse the blood, strengthen the spleen and promote diuresis. An appriopriate amount of sour foods such as tomatoes, oranges and strawberries, can also stimulate appetite as well as the secretion of gastric acid.

Figure out your dampness index
As spring approaches, both the humidity and temperature will rise. Many people rush to dispel dampness by drinking tea or soup. However, people should not dispel dampness unless they really have dampness. Do you know what the symptoms are caused by dampness? Chinese medicine believes that the human body's fluid metabolism system will discharge excess fluid wastes. If fluid does not run smoothly, it will stagnate moisture in the body, leading to the body will becoming wet. This leads to symptoms such as fatigue, sputum, edema and loose stool.
Wondering if you have dampness? See if you have the following symptoms during the last month?
☐White or yellow, damp and sticky tongue coating, similar to crushed tofu. A thin layer that is difficult to brush off.
☐Excessive facial oil and hair oil
☐Excessive phlegm and sticky feeling in mouth
☐Excessive and sticky sweat
☐Dizziness, tight chest
☐Poor appetite, feel full after eating little
☐Abdominal bloating after eating a little
☐Prone to edema, especially in the lower body

如何知道自己有濕?
春天來到,潮濕天氣令人混身不自在,然而除了天氣引致的「外濕」,身體內的濕更影響健康。中醫有六大病邪:風、寒、暑、濕、燥、火,其中濕邪是最難祛除的,所以有「千寒易除,一濕難去」之說。如果你睡夠仍然覺得疲倦不堪、便便稀爛,可能已受濕氣影響了!從以下五大方向,來看看你身體是否有濕。
一、看便便
健康的大便應該呈條狀不散爛,如果大便不成形,即代表體內有濕。
大便不成形 — 偏軟身、稀爛或如水狀
大便黏馬桶 — 質黏、異常地臭、肛門有灼熱感,就是身體有濕熱
抹好多紙巾 — 用好幾張紙巾反覆地抹仍擦不乾淨,也是濕熱症狀
二、看舌頭
舌苔濕潤厚膩都是有濕的表現:
有濕:舌苔白色而濕潤黏膩,如豆腐壓碎後,薄薄一層在舌頭但卻難以刮掉
濕熱:舌苔黃色而濕潤黏膩
三、看胃口
有濕氣就是脾胃功能失調,直接影響食慾。
- 該吃飯的時候卻沒有餓的感覺
- 吃一點點就有飽滯感覺
- 常感到胸悶胃脹
四、看睡眠質素
有濕代表脾胃功能失調,胃不和則臥不安,影響睡眠質素。
- 睡不安寧
- 就算睡足6-8小時,仍疲倦不堪,提不起勁
五、看體型
身體有濕的人,身形總讓人覺得較圓潤
-肌肉「鬆泡泡」
-經常出現水腫症狀
身體有濕,除了袪濕,亦要從健脾著手,因為「脾主運化」,只要脾功能良好,就能運化水濕,令濕氣不易囤積。平日多吃健脾化濕的食物如白米、赤小豆、淮山、薏米、扁豆衣等,每天飲一杯米水,都可以有助強健脾胃,驅走濕氣。
How do you find out if you have dampness?
Spring is here and the humidity can make one feel uneasy. Aside from external dampness caused by weather, internal dampness in the body can affect your health. Chinese medicine lists 6 major pathogens: wind, cold, heat, dampness, dryness and fire, and dampness is most difficult to remove. If you feel tired even if you have adequate sleep and have loose stool, you may already be affected by dampness. Use these five things to assess if you have dampness in your body.
1. Your stool
Healthy stool should form a shape and is not loose. If you stool is loose, there is dampness in your body.
Stool does not form shape- soft, loose or watery
Stool sticks to the toilet- sticky, unusually smelly, feeling of heat in anus means dampness in body
Using a lot of tissues- if you need to use a lot of tissues to clean up, it is a symptom of dampness
2. Your tongue
Moist and thick tongue coating is also a symptom of dampness
With dampness: white coating that is moist and sticky as if a thin layer of finely chopped tofu is on top and is difficult to remove
Dampness and heat: yellowish coating that is moist and sticky
3. Your appetite
The functions of your digestive system will have issued with dampness affecting your appetite
- you do not feel hunger during meal time
- you feel stuffed after eating just a little
- you frequently feel tightness in chest and abdominal bloating
4. Sleep quality
As your digestive system is affected by dampness, your sleep quality is also affected
- poor sleep quality
- you feel tired even after 6-8 hours of adequate sleeping
5. Your body shape
People with dampness in body will generally be rounder
- loose muscles
- symptoms of edema
To remove dampness from body, you have to start by strengthening the spleen as the spleen is in charge of transport in the body. With healthy spleen functions, your body can transport fluids preventing dampness stagnation. Have foods that strengthen the spleen and dispel dampness such as white rice, rice bean, Chinese yam, coix seed and hyacinth bean coat. Have rice water daily to strengthen the digestive system and dispel dampness.
