    鼻敏感突然發作,連環打了十多個噴嚏,不但鼻子擦到發紅,連眼睛也痕癢紅腫起來。有人選擇服用抗組織胺藥物紓緩症狀,不過藥物可能會令人昏昏欲睡,或者出現口乾、便秘等副作用。從中醫角度會建議服用屬於木蘭科植物的辛夷花,有祛風邪、通鼻竅的功效,有助紓緩鼻炎、感冒產生的鼻涕及鼻塞問題,配搭適合的食材,偏寒偏熱體質也可使用。惟注意辛夷花會促進子宮收縮,懷孕婦女不宜服用。

    鼻敏感(寒):辛夷花紫蘇葉薑茶
    症狀:打噴嚏、鼻塞流鼻水
    材料:辛夷花4朵、紫蘇葉2片、生薑4片、紅糖適量
    做法:生薑去皮切片,用刀背拍打一下;辛夷花稍微拍扁,與紫蘇葉及生薑放入保溫瓶,以沸水沖洗一遍倒掉,再注入沸水焗10分鐘,加入紅糖拌勻即可。此茶能反覆沖泡至味淡,建議於鼻敏感發作期間飲用,亦可以一星期連續喝3天為一個療程。

    鼻敏感(熱):辛夷花薄荷茶
    症狀:打噴嚏、眼乾、流黃稠鼻涕
    材料:辛夷花4朵、菊花3朵、薄荷葉3-6片
    做法:將辛夷花稍微拍扁與薄荷葉一同放入保溫瓶,以沸水沖洗一遍倒掉,再注入沸水,焗5至10分鐘即可。此茶能反覆沖泡至味淡,建議於鼻敏感發作期間飲用,亦可以一星期連續喝3天為一個療程。

    When nasal allergies develop, we easily sneeze more than ten times and resort to rubbing our noses until they turn red. At the same time, our eyes become red, swell, and itch. Some would choose to take antihistamine to relieve the allergies, but the medicine can cause drowsiness, dry mouth, and constipation.

    Chinese physicians would recommend taking biond magnolia flowers. It is a type of bud from the Magnoliaceae family that can relieve a stuffy and runny nose, nasal inflammation, and flu. Individuals with a heat-related body constitution can also consume it with other ingredients. However, blond magnolia flowers can cause uterine contraction. Hence, it is not suitable for pregnant women to consume.

    Nasal allergies (cold): biond magnolia flowers and purple perilla ginger tea
    Symptoms: sneezing, stuffy and runny nose
    Ingredients: 4 biond magnolia flowers, 2 purple perilla, 4 raw ginger slices, brown sugar to taste
    Preparations: Peel and cut raw gingers into slices. Slightly pound it with the back of the knife.
    Slightly pound the blond magnolia flowers and place into a thermos with the purple perilla and ginger, rinse everything once with boiling water and then remove the water. Add in boiling water again and steep for 10 minutes. Add brown sugar to taste. The tea can be re-brewed until flavour weakens. For best results, drink continuously when symptoms flare up or drink it consecutively for three days within a week as a treatment course.

    Symptoms: sneezing, dry eyes, thick and yellow nasal mucus
    Ingredients: 4 blond magnolia flowers, 3 chrysanthemum, 3-6 mint leaves
    Preparations: Slightly pound the blond magnolia flowers and place into a thermos with the mint leaves, rinse everything once with boiling water and then remove the water. Add in boiling water again and steep for 5-10 minutes. The tea can be re-brewed until flavour weakens. For best results, drink continuously when symptoms flare up or drink it consecutively for three days within a week as a treatment course.

    Biond magnolia flowers – warm in nature, can dispel wind and relieve a stuffy nose. It is suitable for individuals who have caught a cold, has a stuffy and runny nose, as well as those experiencing dizziness and headache and both chronic and acute rhinitis.

    It is not suitable for people with weak qi and yin and those with a heat-related body constitution. Since Flos magnoliae could cause the uterus to contract, it is not suitable for pregnant women to consume.

    When we sit right under the air-conditioning vent while travelling on a bus, an itch can develop easily in our throat, and this would cause us to cough continuously. This is due to what Chinese Medicine refer as the wind-cold pathogen.

    The wind wanders all about and leaves without a trace. Hence, this kind of cough is very unpredictable and difficult to be treated. Such coughs can also be severe and persistent. Other accompanying symptoms include itchy throat, white phlegm, nasal congestion, runny nose, and clear nasal discharge.

    The best way to treat this is to dispel the wind and the cold and facilitate the flow in the lungs. Consume ingredients that are warm in nature to dispel cold, facilitate the flow in the lungs, and stop coughing. These ingredients include ginger, onion stalk, coriander, dried orange peel, garlic, and basil leaves.

    Avoid eating raw and cold foods such as chilled beverages, cold appetizers, orange, pear, watermelon, and Chinese water chestnut, as they can aggravate the condition. Individuals with milder symptoms can make some ginger brown sugar tea to relieve a cough, but do consult a doctor if the condition persists.

    Effects: promotes perspiration, warms the lungs and relieves cough, strengthens the spleen and warms the stomach, dispels cold and activates blood
    Ingredients: 2 purple perilla tea leaves, 4 slices of raw gingers, brown sugar to taste
    Preparation: Peel and cut raw gingers into slices. Pound them with the back of a knife. Put them with purple perilla into thermos. Steep with hot water for 10 minutes and add brown sugar to taste. You can re-brew until its flavor weakens.

    5. 蟹蒸好,可享用。

    Steam Chinese mitten crabs:

    Ingredients:
    Chinese mitten crabs 6 Nos.

    Preparation:
    1. Soak the crabs in tap water for 10 minutes before washing them.
    2. Brush the crab with a toothbrush with running tap water.
    3. Basil leaves, rinse with tap water. Put in the pot.
    4. Face the crab shell up to preventing the run off of crab roe.

    Steps:
    1. Heat up a pot of water.
    2. Put crabs into pot after water boils up.
    3. Chinese mitten crabs
    Big ones, steam for 20 minutes.
    Small ones, steam for 17 minutes.
    4. Prepare the dipping sauce:
    a. Brown sugar 1 tsp
    b. Zhenjiang vinegar 3 tbsp
    c. Ginger paste 1 tbsp
    Mix well.
    5. Crabs have been steamed well. Serve.

    參考韓國的飲食電視節目이웃집레시피 (之前白鐘元也有上過),做了一個大家可能來韓國會吃的馬鈴薯排骨湯。如在家做的話,有幾個關於做這個菜的要點可以和大家分享喔。

    第一是豬骨的位置,用豬背骨的骨頭做出來的湯奶白香濃,如用其也部份,效果也許會差一點,我在韓國買的確很便宜呢,大概是10000 won (約70港幣)就有大約2.2公斤了。

    第二個關鍵是要放用大醬醃過的白菜,我在香港也甚少見過這款(蚵白菜),那可用津菜代替。湯有了這個醃菜後的確感覺更地道。

    還有一點就是豬骨煮完湯後,要用醬料再醃一下,那最後做出來的湯會更惹味。

    (四至五人份)

    主要材料

    豬背骨兩公斤
    馬鈴薯700克,去皮,切大塊
    .
    韓國燒酒(或煮食酒200ml)
    大醬一湯匙
    鯷魚五條
    昆布兩塊
    水3.5公升
    .
    蚵白菜 얼갈이 (可用津菜/白菜代替)350克
    大醬一湯匙
    .
    豬背骨醃料:
    京葱半條切碎
    醬油4 1/2 湯匙
    辣椒粉 3 湯匙
    薑汁 4 湯匙
    蒜蓉 兩湯匙
    黑椒粉一茶匙
    .
    鋪面材料(Toppings)
    辣椒粉一湯匙
    紫蘇籽粉一湯匙
    芝麻葉切絲十塊
    金菇半包
    .
    做法

    豬背骨在水中浸一小時以上,瀝乾水份備用。
    將豬背骨放入水中,水的份量蓋過豬骨,
    加入燒酒或煮食酒和大醬煮十五分鐘。
    豬背骨用水沖洗乾淨,加入昆布和鯷魚乾及水三點五公升煮兩小時。
    豬背骨撈起,豬骨湯隔渣備用。
    蚵白菜在水中煮熟後,加上大醬一湯匙拌勻,備用。
    將所有豬背骨醃料放到豬骨內, 醃三十分鐘或過夜。
    在一個鍋子裏,放入醃好了的豬背骨和馬鈴薯,加入湯底,煮45-60分鐘。
    最後加入金菇,芝麻葉,辣椒粉和紫蘇籽粉,再煮一分鐘便完成。

    雞肉大腿700g,白菜2手,洋蔥2手,韭菜2手,芝士年糕15個,紅薯1個,紫蘇葉2手,水牛芝士200g
    鹽,胡椒,2湯匙清酒,1茶匙切碎的生薑,1個烏冬面,1米飯,2湯匙泡菜,2湯匙芝麻油
    調料:1湯匙蒜瓣,辣椒醬,3湯匙辣椒粉,3湯匙醬油,2湯匙醬油,1湯匙咖哩粉,2湯匙梅酒,2湯匙芝麻油,一些黑胡椒

    1. 700克雞腿肉1湯匙切碎的生薑,2湯匙的清酒,少許鹽和一點胡椒,並將其加入。
    2.混合3湯匙辣椒醬,3湯匙辣椒粉,2湯匙糖,1湯匙壓碎的大蒜,2湯匙醬油,2湯匙梅子湯,1湯匙咖哩粉,2湯匙芝麻油和少許胡椒粉。
    3.給油鍋加油,加入2盎司白菜,2盎司洋蔥,1個紅薯和15個芝士年糕。
    4.在某種程度上煮熟後,放入2排韭菜和2紫蘇葉炒熟。
