    煲湯好瓜
    飲湯是香港人的養生秘技之一,根據季節與體質,挑選合適的食材或藥材,煲出一鍋保健湯水,美味之餘又能強身防病。如果你是入廚新手,覺得煲湯材料配搭很複雜,又不懂藥材屬性,不妨從簡單的瓜湯開始,按個人體質選擇合適的瓜類,簡單配以粟米、紅蘿蔔即可煲出清甜湯水;想湯味更濃郁可加入肉類,或豆類如黃豆、紅腰豆,甚至果仁如腰果、合桃、栗子亦可。

    偏熱人士
    症狀:喉嚨痛、口瘡、暗瘡、尿少色黃、大便偏乾硬/便秘
    宜選瓜類:苦瓜、節瓜、絲瓜、木瓜

    濕重人士
    症狀:渴睡、容易出汗,胸悶、無食慾、水腫、大便稀爛甚至黏廁所

    材料:佛手瓜2個、粟米連鬚2根、紅蘿蔔1根、蓮子40克、百合20克、蜜棗2枚
    做法:
    1. 所有材料洗淨,佛手瓜去皮切塊;粟米連鬚去衣切段;紅蘿蔔去皮切塊備用。
    2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1小時,最後下鹽調味即可。

    Gourd-based soups
    Hong Kong people like to drink soup to maintain our general wellbeing. To make ourselves a pot of delicious and healthy soup, we can choose the most suitable ingredients and Chinese medicines based on the season and our body constitution.

    If you have neither the experience in cooking nor the confidence in making a pot of soup, try starting with a simple gourd-based soup. Choose the gourd (or melon) based on your body constitution and add in corn and carrot to sweeten the soup.

    To make the soup more flavorful, you can add meat or beans such as soybean and kidney beans or nuts such as cashew, walnut, and chestnut.

    🔥 Individuals with heat in the body
    Symptoms: sore throat, mouth sores, acne, yellowish urine, dry and hard stools/constipation
    Melon choice: bitter gourd, hairy gourd, loofah, papaya

    💦 Individuals with accumulated dampness in the body
    Symptoms: a person has had enough hours of sleep but still experiences fatigue, sweat easily, chest tightness, poor appetite, water retention problem, and produces loose stools that stick to the toilet bowl.
    Melon choice: winter gourd, old cucumber, loofah, hairy gourd

    🤯 Individuals with lots of pressure
    Symptoms: feeling emotional, frequently sighing, hypochondrium distension, breast swelling, belching and constipation
    Melon choice: chayote, loofah, papaya, cantaloupe

    ❄️ Individuals of aversion to cold
    Symptoms: cold limbs and body, excessive sleepiness, excessive sweating, high volume of urine, loose stool or stool with undigested food
    Melon choice: pumpkin

    Chayote and corn soup with lotus seed and lily bulb
    Effects: clears the heart and calms the mind, relieves symptoms such as poor sleep quality and fatigue.
    Ingredients: 2 chayote, 2 ears of corn with silk, 1 carrot, 40g lotus seed, 20g lily bulb, 2 candied dates
    Preparation:
    1. Rinse all ingredients thoroughly. Peel the chayote and slice into pieces. Remove husks from corn keeping the silk and cut into pieces. Peel the carrot and cut into pieces.
    2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.

    一般人認為老人家總是睡得少,都會晨早起床晨運及飲早茶,是否年紀越大睡眠時間就越短?有研究指隨着生理變化的影響,長者深層睡眠時間較年輕人少,但其實每日都需要6至8小時睡眠,有不少長者經歷失眠問題而不自知,以為「老咗就係咁」。中醫理論認為不易入睡、易醒、醒後不易再度入睡均屬於「不寐」範疇,長者常見的失眠原因包括氣血失和、陰陽失調、夜尿頻多等,如果有感覺心煩而不能入睡、睡覺時容易出汗、心悸、頭痛且伴隨頭暈、腰痠、耳鳴等症狀,宜滋陰清熱改善陰虛體質。如有醒後難再入睡的狀況,不宜勉強入睡,到中午或下午有睡意時再休息更好。

    食材小貼士:
    響螺性寒,有滋補肝腎、養顏補血、健脾養胃的功效,適合陰虛火旺、腎虛尿頻人士食用。

    淮山金針花螺頭湯
    功效:養心安神,紓緩虛煩失眠、多汗、便秘、夜尿頻多等症狀。
    材料:新鮮淮山1根、金針花20克、乾響螺頭4-5枚(約80克)、蓮子80克、百合20克、柏子仁15克、腰果30克、蜜棗2枚

    做法:
    1. 所有材料洗淨,乾響螺頭浸水至稍為軟身;淮山去皮切大塊備用。
    2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮2小時,最後下鹽調味即可。

    Soup to improve sleep quality
    Many people think the elderly folks do not sleep for long hours and like waking up early in the morning to exercise and enjoy their breakfast. How true is this? Studies show that the elderly people generally sleep less compared to young people but still require 6 to 8 hours of sleep. Yet, many of them think that insomnia is normal part of aging.

    According to Chinese Medicine theories, the inability to fall asleep easily, waking up in the middle of the night, and the inability to fall asleep again after waking up in the middle of the night are symptoms of insomnia. Most of the problems elderly folks experience are caused by the disruption of the balance in the qi and blood and the yin and the yang energy, as well as nocturia (night urination).

    If an individual experiences sweating and palpitation and is not able to fall asleep due to stress, it is important to replenish the yin and clear the heat from the body to improve the yin-deficient body constitution. Other accompanying symptoms include dizziness, soreness on the waist, and tinnitus. For those who have issues falling asleep again after waking up, they can take a nap in the afternoon to catch up on some sleep instead.

    Tips on ingredient:
    Conch is cold in nature, nourishes liver and kidneys, improves skin and replenishes blood, strengthens the spleen and nourishes the stomach. Suitable for those with yin deficiency and excess fire, asthenic kidneys and frequent urination.

    Chinese yam and orange daylily soup with sea conch
    Effects: Nourishes the heart and calms the mind. Relieves symptoms of insomnia, hyperhidrosis, constipation, frequent nocturia, etc.
    Ingredients: 1 fresh Chinese yam, 20g orange daylily, 3-4 pieces of dried sea conch(around 80g), 80g dried lotus seeds, 20g lily bulb, 15g biota seed, 30g cashew nuts, 2 candied dates
    Preparation:
    1. Rinse all ingredients thoroughly. Soak dried sea conch in water until softened. Cut the peeled fresh Chinese yam into pieces.
    2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 2 hours. Add salt to taste.

    混合醬:
    蠔油1 1/2湯匙
    生抽1/2湯匙
    適量胡椒粉

    粟粉水:
    水 2 1/2湯匙

    Some ginger

    2)*Braised Pork Ribs w/ Mushroom:
    2 oz(57g)
    shiitake mushrooms
    1 1/2 lb(680g)pork ribs
    Marinade ribs:
    1 Tbsp soy sauce
    Some white pepper
    1 Tbsp cornstarch
    1 tsp minced ginger

    5 red dates
    Garlic
    Ginger

    Sauce mix:
    1 1/2 Tbsp
    oyster sauce
    1/2 Tbsp soy sauce
    Some white pepper

    Cornstarch water:
    2 1/2 Tbsp water
    1 1/2 Tbsp cornstarch

    3)* Fried Egg w/ Tofu
    2 shallot
    1 lb(453g)firm tofu
    Tofu seasoning:
    Salt, white pepper

    5 eggs
    Salt
    White pepper
    Sesame oil

    超豐富足料冬瓜盅食譜:

    材料:

    冬瓜
    蝦仁5隻
    冬菇1粒
    高瑤柱1粒
    帶子2粒
    粟米拆粒20g
    雞肉30g
    竹笙2條
    豆腐20g
    百合少許
    清雞湯50g
    鹽少許
    糖少許
    水適量
    蝦皮5g
    蟲草花數條
    銀耳10g
    蓮子8粒
    栗子3粒
    夜香花 適量

    做法:
    ▶️高瑤柱,冬菇清水浸過夜;蟲草花,銀耳,蓮子,百合以清水浸發約一小時後,瀝水備用。
    ▶️蝦仁,雞肉,冬菇,竹笙,切粒。
    ▶️把蝦仁,雞肉,冬菇,帶子下油鑊微微爆香,可加糖鹽調味
    ▶️冬瓜把芯籽去除,不要削太簿,周邊約留1吋肉,除夜香花外,所有材料都放入冬瓜盅內,不要放太滿,約預留1吋距頂
    ▶️放入蒸爐蒸90分鐘
    ▶️夜香花可於完成前10鐘才放入
