These small abalone-like shellfish is actually called "Jiu Kong" which translates to "9-holes". It is in the same family as abalone but smaller, and they usually have more breathing holes (6-9) as compare to abalone (usually 4-6).

Here they were pan fried with salt and spices and eaten with the livers and ovaries. I tried to link it back to the Japanese ones I had before, and they are "トコブシ" (Tokobushi) in Japan, often show up on menu when abalone (鮑 Awabi) is not in season. The version I tried in Tokyo before was cooked with butter in sizzling clayplot at Shimada (you can see in #littlemeg_shimada ). So good!

In Hong Kong, we also have these small 9-holes, and the most common ways to cook it is of course, steam! With preserved mandarin peel or deep fried with salt and pepper!

【冬天北海岸當季美味 不能缺少貢寮九孔鮑】
貢寮九孔鮑即將進入盛產季,現在已有養殖漁民試採,目前九孔池邊價1斤450元至480元的行情,比去年同期價格好一些。立法委員賴品妤、沈發惠、林楚茵23日在立法院舉辦貢寮九孔鮑美食推廣會,呼籲消費者選購本土九孔鮑、拒買冷凍假貨。
為了與進口中國鮑做出區隔,貢寮區漁會銷售九孔多為活體,相較於冷凍中國鮑,貢寮九孔口感鮮甜,最常見的烹調方式是「活體乾煎」,將九孔的腹足朝下放在煎鍋上煎熟就能吃,冷凍中國鮑則不具備乾煎的條件。貢寮區漁會總幹事林麗美坦言,貢寮九孔鮑與中國鮑的競爭很辛苦,因為中國鮑可獲得他們政府的關稅補貼,等於是以零關稅搶攻臺灣市場。
